Friday dinner was shrimps and calamari grilles on bbq then tossed in vodka tomato sauce with portobello mushrooms served with a nice garden first zucchini... noodles :) Need I say how good this was?? lol :)]

I've been obsessed with zucchini (and vegetable) noodles since I first bought my spiralizer 3 years ago. It's so good!

Cheese is never depressing, @klmnumbers. Never. It represents all that is good in the Universe ;)

Here’s the ginger-soy black bean burger recipe, @allykat910. Makes one large burger, scales easily to make more.

1 cup black beans, drained and rinsed
    1-2 stalks green onion, diced
    1 Tb soy sauce
    1/2 tsp ground ginger
    1/2 tsp onion powder
    1/2 tsp garlic powder
    1/4 tsp black pepper

In a large mixing bowl, place the black beans, onion, beans, and soy sauce. Mash with a fork or potato masher until smooth enough to bind but retaining some texture. Stir in the seasoning and taste. Add more of anything as desired, shape into patty, and cook over medium heat on an oiled skillet on each side until lightly golden, flipping (carefully! It's delicate) once.
