    What a weird coincidence! I just discovered this recipe via Cooking Light a couple days ago. Had a green pepper to use up so I added that instead of carrots and used low-fat Ritz instead of saltines. They were soooooooo good!!!

    In fact, since most of the ingredients are already included, I've decided to use the leftover cooked meatloaf muffins in Bubble Up Pizza Casserole (google it, it's awesome) tonight. Figured the 4 muffins equal about a 1/2 pound of hamburg and I'm going to sub the other half with low fat sausage. Yummy and not too bad calorie-wise!

    Going to try these with ground chicken instead of turkey or beef. Also might be good with ground pork.
