Creamed Spinach

If you haven't already check out hungrygirl.com and see her recipes for laughing cow cheese, it's awesome stuff!! I love to just have a snack of pretzel sticks and one triangle of laughing cow cheese for an afternoon snack! I love it and Hungry Girl has lots of good recipes to use it in!!

I made a variation of her fettucine alfredo last night and it was DELICIOUS!
Serves 1 (158 calories):
I bag of House Foods tofu shirataki fettuccine
2 wedges Laughing Cow creamy swiss
1 tablespoon Fage 0% Greek Yogurt
2 tablespoons grate parmigiano reggiano cheese
Prep noodles (rinse, pat dry, microwave one minute, pat dry again). Mix everything together and microwave until cheese wedges melt (1-2 minutes?). Stir, add salt and pepper to taste and enjoy!!!0 -

A really simple tip is mixing it into a hot baked potato, yummy!0
