    Last night - Pan fried boneless chicken thighs w/Cajun pepper-brocolli cream sauce over a quinoa/rice mix. Tonight - same sauce and quinoa/rice with a boneless porkchop and garden salad.

    Lunch was a slice of pizza (because it was from the good local pizzeria and not Dominos, Pizza Hut, or Papa John's), a half a slice of cake with too much icing, and a couple of Jolly Ranchers from the piñata. Can you guess that I was at a birthday party this afternoon.

    Lunch: leftover chicken tender with spinach and basil, dressed with a little light Russian dressing. Cherries for dessert.
    Dinner: gazpacho, Thomas corn muffin. 2 ounces of dry red wine. Home-made fruit smoothie for dessert.

    Tonight I made spicy Italian chicken sausage with fire roasted peppers and onions. (I love Trader Joes!). Added some spinach as a side to get my greens in for the day and I have plenty of leftovers for lunch tomorrow.
