Tonight is Taco Tuesday! The meat is 99%lean turkey....and I have to say, I like cooking with ground turkey rather than lean beef. It just holds the taste much better!

My son loves his with JUST cheese and meat. Nothing else. I will skip the cheese, add non fat yogurt as my "sour cream" and a mango salsa. yummm!

Panang curry shrimp. Light coconut milk, lots of veg, served over equal parts shredded fresh spinach and steamed brown jasmine rice.

Yikes. When I put it like that, it sounds grim--but it's actually easy and tasty.

Taco Tuesday here too. Also with 99% lean turkey and minus the taco seasoning on my portion(too much sodium) Small flour tortilla, meat, onion and cheese pressed in the panini maker for easy quesadillas.
