Haven't had dinner yet, but I'm an enchilada fanatic, so I'll probably have a Lean Cuisine chicken ench.

Made Pad Thai for dinner. One of the few dishes that the whole family will all eat. We may have leftovers for lunches tomorrow if my midnight eater son doesn't get into it (he is as thin as a rail but eats his body weight at each meal and needs snacks in between).

Yesterday my lunch was six white rolls from Costco toasted and covered in cream cheese from Einstein's Bagels...because, you know, carbo-loading and also weak-willed.

Yesterday's dinner was quinoa pizza bites from Pinterest. 2/10 do not recommend! Although maybe if I had better pizza sauce, I could deal.

Today lunch was 1/2 cup of my home made chili with some of the pork roast cooked in crock pot, 2 oz of pork & broccoli with cheese sauce. Dinner was almost the same but with 1 cup of chili. Dessert was 1 frozen waffle with 1/2 cup fresh blueberries & cool whip on top
