Leftover cauliflower-leek soup (made with homemade bone broth, roasted leeks & cauli), served with bacon-roasted Brussels and soy-marinated roasted tofu cubes, sprinkle of parm.
Sort of a wild flavor combo but the soy is double aged and nutty, so it worked with the nuttiness (if that's a word) of the cheese, deeply roasted Brussels and roasted cauliflower.

Veggie Shmeggie McEggie??
I was inspired by Dennys fitfare Veggie Skillet, it took me a couple of tries before i came up with something that looked and tasted good
But i have to say that this turned out great and it's very filling too
There's even fewer calories (About 200)1 -
