join the Keto group, they are a wealth of ideas and help. I have been doing Keto for over 6 months now and have lost 16kg. YES it is hard to start and sometimes continue but so is any new way of eating after years of food abuse.9

I'm 21 y/o and have been abusing food for all those years. I'm glad to hear it's not just me who found it a bit of a struggle with keto. I'll join the group on here. Hopefully, I can get back on the wagon for longer than 24 hours.2 -

There is nothing wrong with doing keto if it is something that suits you and helps you control the calories you eat and seems to you like it may be a way of eating you will enjoy sticking to longer term.
For longer than you've been alive I did not bother to try to control my weight because only people on keto lose weight, and every single one of them (who I had met to that point of time) sooner or later run into your current problem... and didn't go back on keto till after they regained all the weight they had lost.
It really doesn't sound like keto is THAT exciting for you. Which would make me question you choosing it as your future way of eating.
Are you aware that you can pretty much eat anything you want* and still lose weight? "All" you have to do is eat less calories than you burn for a long enough period of time!
*Most people who successfully eat "anything" they want discover that this involves a number of trade offs and choices in order to achieve satiation and optimum satisfaction within their caloric budget. "Anything" does not mean "everything", nor does it mean "all the time". Even "healthy eating" is good from time to time. Maybe even a lot of the time!
It is never too early to start exploring and learning to eat the way you plan to continue to eat in order to maintain your weight loss once you've achieved it.17 -

I assume about half of that was water weight. That still leaves you with more than 3lbs loss per week. The problem might not be keto or not keto (if it suits you there's nothing wrong with it). You might simply have been under-eating so badly that you eventually couldn't sustain it anymore.
How many calories were you eating per day on average? Were you tracking your calories to make sure you were feeding your body a suitable amount?
Even at my heaviest (115kg (roughly 250lbs), as a 170cm female), I couldn't sustain more than 1lbs loss per week. Mentally I couldn't deal with more. So it's taking me longer, but after a year of maintaining a 35kg loss, I feel confident that I will maintain that loss and any future loss I will have.
Here's how I approached weightloss this time around:
1. tracked everything I ate for a week.
2. Analyzed what I ate and figured where I could cut without feeling deprived (serving sizes was a huge problem with me. I would eat 2-3 servings of pasta as 1 meal.)
3. After a month of eating to lose 1lbs a week and having achieved that, I rechecked what I was eating to see if there was anything I could change to increase satiety (more protein, moderate amounts of starchy vegetables and grains, and less fat. I don't feel full on fats. More veggies and less fruits. Desserts less often, but still regularly).
4. Then I kept going again. Over and over and over again until I had reached my first goal (80kg).
5. Then I took a year to learn how to maintain that weight. Sometimes more, sometimes less successful. A stint on Corticosteroids did a number on my weight due to water weight and near uncontrollable hunger attacks. I stuck with the numbers I knew worked for me and I'm nearly back to the 80kg goal I had set for myself.
6. Next year, I'll attack the next 5 kg. If I'm not struggling too much because of the meds (chronic health problems, so chances are high I'll be back on those sometimes next year), I might even try for a healthy BMI (72kg and less).
I'm not aiming to be perfect (whether with my diet nor with exercising). I'm simply striving to be better than yesterday.
So figure out what you like to eat and what serving sizes are appropriate for you. Then be consistent at eating those serving sizes.9 -

General hints....

Smart people make the process as easy as possible rather than hard as possible - choose an eating style or method of creating a deficit that you enjoy (or dislike the least!). Invest some time in really thinking and planning ahead rather than stumble into something. A day, a week, a month of adherence is an irrelevance to you with the amount you need to lose.

Starting a diet is easy, anyone can do that with a tiny bit of motivation - it's sticking to it for the required duration that is difficult (commitment). #1 helps reduce the effort/pain of that commitment.

Think ahead how you will deal with setbacks or wobbles. If you can maintain weight rather than start to regain during a time when your resolve is low it will make a huge difference.

I personally would never do keto. I like my carbs too much and find them more filling than fat. In fact most foods high in fat are not enjoyable for me. Except nuts. I love nuts.
Saying that, there are some that have brilliant success with this diet. They enjoy the food, find it satiates them more than a higher carb diet, reduces their craving and know they can stick with it long term because it works well for them. If you don't have medical issues which would benefit from a keto diet and don't enjoy it, why would you stick with it?
The only people that have long term success are those that choose an eating plan they can continue for the rest of their lives. This is not a short journey where you can resume normal eating habits once you have reached your goal. It is a change of lifestyle that you have to stick with for the rest of your life if you want to maintain your goal weight long term.7 -

Have you considered making smaller changes as opposed to one big change. Maybe start with getting calories under control while working in foods you like and maybe focusing on whole foods 90% of the time. Then maybe focusing on macros later? What I have found in my time here, is that people make so many changes as once, that they struggle to stick with things.
Alternatively, maybe start by going lower carb and slowly decreasing carb intake as you go.4 -

Using Keto or low carb when you are morbidly obese is one of the better times as insulin resistance increases with obesity. If anything, it's better to come off the more lean you get because you are more insulin sensitive and less likely for your body to process carbs.8 -

I found getting started with keto, or even just with cutting back, was the hardest part. Easing into it might be the easiest but you'll need to make the jump at some point.
I do doubt you list 20lbs of water weight. Maybe 10lbs of water but 20? That other 10lbs was probably fat. Congrats.1 -

The main thing to be concerned about is calories as that drives weight loss and gain. Outside of that increases to protein is beneficial from a metabolic and energetic standpoint, and carbs and fats can be whatever.
For keto, carbs should be sub 50g and sodium 3000 to 5000mg +.
Ultimately, there is no more important factor than finding a sustainable diet that allows you to addressed energy balance (CICO). Keto and low carb can be beneficial for those with certain medical conditions and those who are satiated by fat. If you are a volume eater and more insulin sensitive, than a lower fat diet tends to prevail.3
