    Just home today from a trip up to Ottawa. First at-home-cooked meal: apple/onion/roasted butternut squash soup, baked chicken breast, maple-glazed roasted carrot straws, brown rice, microwaved frozen peas. MFP says about 1300 cals, 60g protein, 31g fiber, 52g sugar (mostly from the apples - 2 bowls of soup; no lunch, so I had the macros headroom available).

    Ordered this soup in an Ottawa pub, and they were out of it, so I tried recreating it here. Maple glaze as a nod to my family up in Canada, LOL.

    I made your cottage cheese mayonnaise yesterday. I was wondering if the mustard was suppose to be prepared mustard instead of ground mustard that you get on the spice rack.
    I made it with ground mustard and it has a strong mustard flavor which I happen to enjoy. I used it to make a tartar sauce and all I needed to do is add the pickles. I'm thinking prepared mustard would hive a more mayonnaise like flavor.

    900cal teriyaki burger with funions for dinner last night! My hubby and I talked about making this for days and he grilled in a snow storm to make it happen. It turned out so delicious!!

    This looks all great - as usual. Do you mind sharing how you season/make the sheet pan chicken/veggies? It looks delicious (and simple?) to me.

    ETA: One of my latest experiments with red cabbage stirfry from the other day: Shredded red cabbage, mushrooms, mung bean sprouts and veggie ground beef replacement.

    0aufsi18oz93.jpg I bought a bag of cauliflower fried rice from Trader Joe's. Added 1 lb of boneless skinless chicken breast, some flavored wok oil, and towards the end added 2 eggs and scrambled with a little fish sauce for flavor. divided it up for 2 meals clocking in at 500 calories each. you could use less oil or chicken, or divide it up further depending on your calorie demands.
