    @lporter229 Those are chocolates! Beetroot caramel, earl grey creme and olive oil rosemary caramel :)

    Tonight: slowcooker Curried Chicken Stew, served over brown rice. Ingredients are: sweet potatoes, carrots, green peppers, onions, red lentils, tomato paste and tomato sauce, coconut milk, chicken stock, cubed chicken breast, seasonings, herbs, spices. Very low salt, moderately spicy hot. Very satisfying for the family on a wintry night.

    Did you know that 300g of steamed cauliflower with 1.5 ounces of Tillamook sharp cheddar cheese kept me fueled for 12 hours of a very busy shift. I certainly did not know that was possible.

    Cauliflower Lasagna

    1 head cauliflower, broken into florets
    1 lb ground beef or turkey
    2 cups low carb pasta sauce (your choice)
    1/4 cup onion, diced (optional)
    1 cup whole milk ricotta
    1-2 cups shredded mozzarella
    1 Tb olive oil

    Toss cauliflower florets in 1 Tb olive oil . Season with salt and pepper to taste. Roast on foil-covered pan at 375 degrees for 20 minutes.

    While cauliflower is roasting, brown ground beef or turkey with onion. Drain fat if desired.
    Add pasta sauce and stir well to combine.

    Remove roasted cauliflower from oven.
    Spoon 2-3 Tbs of meat sauce into bottom of 9x9 dish.
    Add all of roasted cauliflower to baking dish on top of sauce.
    Add remaining meat sauce and spread evenly over cauliflower.
    Spoon ricotta cheese over top of sauce and spread evenly.
    Sprinkle shredded mozzarella over top of dish, and bake at 375 for 30-40 minutes or until done through.
    Turn oven to 400 and cook additional 5-6 minutes to brown cheese on top.
    Serve and enjoy! Keeps well in fridge for several days.
    (I do meal prep, and this recipe makes 6 hearty servings)

    Veggie Scramble

    1 large bag of frozen California Blend veggies (Broccoli/Cauliflower/Carrots)...thawed and drained
    1 handful of greens (Kale/Spinach, whatever you like)
    10 eggs, beaten lightly
    Seasoning to taste...Salt & Pepper, Italian seasoning, etc
    1-2 Tbs butter

    Melt butter in large skillet and saute veggies long enough to heat through.
    Add handful of greens, and continue to stir until they slightly wilt.
    Pour in beaten eggs and add seasonings as desired.
    Continue to stir to scramble eggs as they cook.
    When eggs are done, divide portions into 5 containers.
    each morning, I microwave one container and add a bit of cheese and Sriracha plus extra black pepper.
    Takes less than 10 minutes to make breakfast for the whole week...and only one pan to clean!

  • @mic1018 I managed to miss your post but thanks to it being shared above I've seen it. Thank you so much for these. I'm a veggie so will substitute quorn mince for the beef but they sound amazing! Thank you so much.

    Well, to be fair, I am gluten free so I would see this on the menu, hope that it might be gluten free and then ask before ordering. I guess being GF for many years has put me in a different mindset.

    I know right! I work a LOT, but when I had the time I would totally try my hand at making pretty much everything that gets posted. It all looks amazing. I do believe we have a few undercover Michelin chefs in here.
