Cooked this recently. You could add more veggies if you like. Was a hit with the youngsters at my house. I liked it, too, and will make it again.

Have made this jambalaya several times. My personal favorite for winter comfort food. Usually eat two bowls. Lots of veggies in it and you could add rice or quinoa or more veggies if needed.

I eat like this a lot, I really prefer high volume meals too. My favorite dinner is a full pan of a variety of seasoned roasted vegetables (broccoli, brussel sprouts, peppers, carrots, mushrooms, zucchini, etc) and after it starts getting pretty crispy I'll push it all together and crack 1-2 eggs on top with about half a cup of black beans, bake some more until the eggs set. I like to keep the eggs a little runny, but if you dont like runny eggs it's also tasty to scramble them up and just pour it over everything kind of like a frittata.
For dessert I love banana ice cream. I throw frozen bananas and protein powder in my vitamix with just a bit of water. Not exactly low calorie but after a big workout being able to eat a huge bowl of ice-cream is divine so I will often save 300ish calories for dessert.4 -

Do you cook the veggies in oil in a wok? Or how? TIA0 -

Well example of what I had last night.
100g baby potatoes parboiled, cooled and halved.
200g brussel sprouts halved.
100g brown mushrooms halved.
half medium onion sliced
2 garlic cloves, crushed.
Drizzle of aged balsamic.
200g bone in pork shop, pounded a bit (tenderized) and sprinkled with Webber chipotle spice mix.
Simple side.
Diced cucumber, small tomato and the other half of the onion sliced.
125ml of plain yogurt.
S+P to taste.
Mix everythign and let it sit until you finish the rest.
Heat up and spray a cast iron pan with spray.
Pork chop in for couple minutes, flip and repeat, remove and onto a plate covered.
Throw onions in, then garlic until fragrant.
Add everything else and cook until everything get nice color.
Splash in the balsamic to bring up all the stuff stuck to the bottom.
cook for few minutes.
Add to the meat on the plate, salad on the side and go to town.
I could hardly finish my plate.
This looks awesome, I think that might be dinner tonight or tomorrow, I see your posts on the post pictures of your meals thread they all look great.2 -

Super quick and filling supper tonight. 100g black beans, 100g frozen corn, 1/2 can HOT Ro-Tel over a bag of broccoli florets. You carnivores could add skirt steak, grilled chicken or shrimp. It was really good and took about 7 minutes to toss together. Following with vanilla chia pudding.3

@nowine4me do you happen to know the calorie count for this off the top of your head? I have all of those ingredients, and literally nothing else at my house and I might avoid going to the store one more day1 -

SWAG guess 325 (100 each corn, beans, broccoli), 25 for 1/2 Cup rotel.2 -

I’m vegan and eat mostly carbs! Just started MFP! I lost close to 40 lbs since October 1st when I went from a vegetarian diet to vegan! I eat close to 3 thousand calories a day and still lost weight by keeping my fat below 20 percent of my calories!18

Do you weigh your food on a food scale? If not then you may not be eating 3,000 calories & eating way less than you think. Most people tend to think they're eating less than they burn & gain weight, but the reverse can also happen.
Plus it's calories in/calories out that result in weight loss.2 -
I used to drink lots ! Lots of jack and coke and lots of beer! So I quit that and quit the fast food! Started going plant base and kept my fat under 20 grams a day ! Started eating lots of rice, beans, potatoes, like a starch base whole food vegan diet! Didn’t really keep exact track of my calories and dropped forty lbs! So I just started to track my foods on MFP and now I’ll have a better idea on if it’s the food or the quitting alcohol! I’m just trying now to maintain my weight! I’ll have a better idea in a month!!3

Great ideas ...will be adding tons more veggies to my meal plans1

Volume Fail - bought orange cauliflower (Whole Foods) and roasted it with garlic. After cooking, put in the food processor with some nooch and flax milk. Poured it over macaroni shaped shirataki noodles and baked. Looks and tastes nothing like Mac and cheese. Horrible.
And....if you’re wondering....flax milk does NOT work properly for ice cream fluff.6 -

Last night this protein angel food cake happened because my box of egg whites was about to expire.
8 egg whites or 1 cup
15g protein powder or half scoop
1tsp cream of tartar
1tsp vanilla extract
Beat all but protein powder until peaks form.
Fold in protein powder
Bake at 350F for 20 min.
Had half this morning with fruit and coffee for breakfast topped with Walden farms syrup.
good to know your boxed whites worked i hear they dont1 -
If I eat salads and lots of veggies, I definitely fall into the volume eater category. I was at a friend's house and brought food to make a salad. I asked her for a big bowl. When she handed me a soup bowl, I said, "No. I mean a really big bowl." She said, "Oh I thought you meant a bowl to eat it in, not mix it up in." Then I had to explain that I was going to eat the entire bag of lettuce, the whole avocado, etc and that the mixing bowl and the eating bowl are one in the same.16

It isn't as huge as a pint of strawberries but lately I have been chopping up a big apple, sprinkling it with cinnamon and microwaving it. So tasty and comforting for the cold weather! Plus it leaves some room in my calorie budget for some chocolate or ice cream!5 -
Dessert: mashed banana with non-dairy chocolate chips (delicious) and a sprinkle of Ezekiel cereal for some crunch.5
