I guess this is a hamburger helper type of meal but a couple things might make it worth the post.
- Those are about two ounces of radish greens sautéed with the rest of the dish. First time I've cooked with them. They are surprisingly nutritious, taste good in this kind of preparation, and in a sense they're free; I've been throwing them away all my life. Nutritional data and more information can be found here. I won't be tossing radish greens out anymore.
- I gave up processed meat the first of the year and assumed that was the end of my sausage days. This is fresh chorizo made in a chain produce/grocery/health food store called Sprouts which is becoming my favorite place. It is uncured and made with 85% lean ground chuck. You have to add fat to cook with it but I used one tablespoon of olive oil, pretty healthy I think.

Cauliflower Lasagna
1 head cauliflower, broken into florets
1 lb ground beef or turkey
2 cups low carb pasta sauce (your choice)
1/4 cup onion, diced (optional)
1 cup whole milk ricotta
1-2 cups shredded mozzarella
1 Tb olive oil
Toss cauliflower florets in 1 Tb olive oil . Season with salt and pepper to taste. Roast on foil-covered pan at 375 degrees for 20 minutes.
While cauliflower is roasting, brown ground beef or turkey with onion. Drain fat if desired.
Add pasta sauce and stir well to combine.
Remove roasted cauliflower from oven.
Spoon 2-3 Tbs of meat sauce into bottom of 9x9 dish.
Add all of roasted cauliflower to baking dish on top of sauce.
Add remaining meat sauce and spread evenly over cauliflower.
Spoon ricotta cheese over top of sauce and spread evenly.
Sprinkle shredded mozzarella over top of dish, and bake at 375 for 30-40 minutes or until done through.
Turn oven to 400 and cook additional 5-6 minutes to brown cheese on top.
Serve and enjoy! Keeps well in fridge for several days.
(I do meal prep, and this recipe makes 6 hearty servings)
I made this last night and I forgot to take pictures. I have one small bit left for my lunch today, so I'll try to fancy it up and snap a pic. I had a good bit of rotisserie chicken to use up, so I used that instead of ground beef. It was delicious and the family said it was a keeper. Definitely going to spice up my sauce a bit next time...I just used a jar of whatever I had on hand. Nice volume of food was very satisfying. Thank you!
ETA: My husband is Italian so I didn't dare call this lasagna. I called it "Cauliflower Chicken Ricotta Bake."2 -
