    1/2 C steel cut oats, 1 tablespoon cinnamon, 1/2 C blueberries, 3 egg whites, 1/2 tablespoon honey. This has been my breakfast the past few days. Sometimes I add bananas. But I’m trying to cut back on carbs some.

    honey sriracha turkey meatballs with roasted veg and rice. nothing fancy but it was a quick lunch meal prep for the week.

    Add pasta sauce and stir well to combine.

    Remove roasted cauliflower from oven.
    Spoon 2-3 Tbs of meat sauce into bottom of 9x9 dish.
    Add all of roasted cauliflower to baking dish on top of sauce.
    Add remaining meat sauce and spread evenly over cauliflower.
    Spoon ricotta cheese over top of sauce and spread evenly.
    Sprinkle shredded mozzarella over top of dish, and bake at 375 for 30-40 minutes or until done through.
    Turn oven to 400 and cook additional 5-6 minutes to brown cheese on top.
    Serve and enjoy! Keeps well in fridge for several days.
    (I do meal prep, and this recipe makes 6 hearty servings)


    I made this last night and I forgot to take pictures. I have one small bit left for my lunch today, so I'll try to fancy it up and snap a pic. I had a good bit of rotisserie chicken to use up, so I used that instead of ground beef. It was delicious and the family said it was a keeper. Definitely going to spice up my sauce a bit next time...I just used a jar of whatever I had on hand. Nice volume of food was very satisfying. Thank you!

    ETA: My husband is Italian so I didn't dare call this lasagna. I called it "Cauliflower Chicken Ricotta Bake."

    @fitoverfortymom ....So happy your family enjoyed my "lasagna" recipe! I will have to try it with chicken as well! I bet it was just as tasty! Your comment about your Italian hubby made me laugh! My hubby is Italian too....so I can definitely relate! Thanks for giving my recipe a try! :)

    Breakfast! Fried eggs, kale sauteed with homemade sausage, air fried sweet potato fries, homemade fermented salsa. All sprinkled with nutritional yeast. I'm loving Whole 30! Day 15!

    Meal 1: variety of fruit (ex: 1 orange, 1 golf ball sized clementine, 2 bananas, 1 cup red grapes, 2 lychees, cup of frozen pineapple/strawberry/blueberry mix, and 1 Fuji apple)
    Meal 2: Mix of steamed and raw vegetables (ex: 1 steamed zucchini, 3 cups steamed brocoli, 3 steamed carrots, 1 raw carrot, tiny can of tomato paste, herbs to season, 1 head romaine lettuce, steamed greenbeans, bean sprouts, steamed mushrooms, and raw spinach)
    Meal 3 (snack or “dessert”): either a big bowl of airpopped popcorn or Medjool Dates
    Liquids: usually just water...sometimes carrot juice or Bragg’s Apple Cider Vinegar drink or herbal tea
