I am curious what everyone made for dinner tonight! Might give me some ideas for the future. For some reason dinner always has and remains to be my biggest meal of the day.

Turkey white bean pumpkin chili. Really good! I made mine on the stove instead of crockpot because I was impatient.

I would add a little lime juice to the recipe below, but it is similar to the one I use which is quicker than most because using commercial Thai red curry paste is easier than pounding up herbs and spices yourself. Though we didn't really cook tonight because we batch cooked the sauce a few weeks ago so we just pulled a portion out of the freezer and heated it up in the microwave. We served it in the bagna cauda dish (Italian fondue bowl).

Smoked ham and air fryer roasted carrots with italian seasoning on them.2

Homemade oriental chicken salad pita pocket with leaf lettuce and a rice noodle garnish2

Tossed salad with tuna and hardboiled egg, and Walden Farms Chipolte Zero calorie dressing. Even with 2 Tablespoons of real bacon bits, only 244 calories. Just too kitten hot and humid to eat or cook tonight!4

Korean BBQ chicken thighs and steamed broccoli1

Salad with roast cherries, buttermilk dressing and croutons. The air fryer is so well insulated I could roast cherries despite hot weather without heating up the kitchen. Manzo all'olio (Lombardy beef stew) warmed up in the microwave that was batch cooked last month. Garlic mash and frozen peas.1

I am working late tonight, so a fast and easy meal of chef's salad: Lettuce, tomato, hard boiled eggs, turkey, ham, cheese and also adding some canned beets because I like them.1

It may have been 95 degrees outside, but I wanted soup. Made Stuffed Pepper Soup (original recipe is from Skinnytaste, but I change it a bit to fit my tastes). It was perfect!3
