Thanks, much appreciated! I didn't know what sofrito was until recently, when I was served arroz con gandules. I now make my own sofrito in batches, and keep a couple of ziplock baggies of it in the freezer. I've tried making my own sazon mix as well. And taco seasoning, and other etc. condiments. Being a bit older, I try and reduce overall salt and MSG. I'm not a complete natural foods activist, but do try and reduce the number of labelled items I use, LOL.
I'll have to do an experiment. I've been on a cabbage kick lately, making fresh slaws (see below for an example, a red cabbage vinegar slaw [i.e., no dairy]) and various cooked dishes.

Summer grilling season makes even basic stuff better: grilled chicken breast, grill-baked yukon gold potatoes, grilled foil-packet savory green beans, fresh carrot-raisin salad, fresh tomato salad. When I make dairy-dressing carrot-raisin salad, like this, I use greek yogurt, not mayo, and less sugar than most recipes. It's good, but even better the second day (it gets more mellow from the yogurt).

I didn't realize the instant pot has a yogurt button ! My husband usually uses it - but now - I think I'm going to try to make some yogurt. Thanks!

lol it works because I'm totally a fussy eater. I feel like a lot of the foods I end up making are kid friendly ways to sneak in veggies. Because I use the same method on myself lmao2 -
