Dinner tonight was Vietnamese beef stew (478 cals per portion) with baguette. Cooked all day in my slow cooker...the house smelt amazing when I got in from work!

Dinner was not a success. Spinach sauteed with garlic and boiled new Jersey Royals tossed in butter were fine. Nothing can go wrong with some sliced tomato. Batch cooked freezer meatballs in leftover lower fat cheese sauce split when re-heated in the microwave. Cheese sauce was no fat cottage cheese, semi-skimmed milk, and grated mature cheddar blitzed together in the food processor.

Love salads. Just don’t know how to make different ones. Here is simple salad tomatoe cucumber purple onion jalapeño peppers cilantro plus sausages

Wow, that ATT (Avocado, Turkey Tomato) looks good. I will have to try it, I have all the ingredients.
Here is a tip for a crispier grilled sandwich: if your toaster is wide enough place two slices of bread together in one slot, toast the outside. Take it apart, put your sandwich fixings on the toasted sides and then grill the not toasted parts as normal. Helps the sandwich from getting a soggy inside and is more crispy.

Ooh, cottage cheese in a smoothie! I don't make smoothies at home, but I really like that idea. Love cottage cheese, but my brother doesn't like it, though will force himself to eat some because of the excellent protein content. What a good way to sneak it in.
