    Experiment number one with replacing pancetta in carbonara for a non pork eating dinner guest coming over in a couple of weeks went pretty well. A home cured duck leg only sat in the salt the fridge for about 20 hours and hadn't undergone any drying or hanging. But as duck bacon for dicing and frying it worked well in a carbonara.

    I will try making this again after the duck has cured a few days longer in the fridge. And again after with a batch that has been in the dehydrator and another batch that has been hanging two weeks.

    I wanted some chicken for dinner last night, and I like pan roasted tomatoes..so I put this together.

    Pan seared (cast iron, of course) chicken breasts, green peppers, onions, green beans, and cherry tomatoes in a white wine reduction sauce. Made enough for 2 people, but the entire dish was just a hair under 700 calories (see my diary for 8/7/2018-Dinner). I weighed everything to the gram. Please excuse the dirty stovetop, it needs cleaning.

    It was amazing.

    I prepare mine the same, except blackberries/raspberries instead of peanut butter.

    I made beef stew last night. It included beef chunks, potatoes, carrots, onion, celery, beef broth, red wine, tomato paste and some herbs. I thickened it with some corn starch as well. I added some smoked paprika at the end. That added a bit of a different flavor. My fiance liked it.

    I prepped a huge batch of Mediterranean quinoa salad last night, if that counts. If not, the last meal I cooked would be homemade mac and cheese with sauteed cauliflower, yellow squash, and green beans on Tuesday.

    I made spaghetti squash with spaghetti sauce and some shredded parmesan cheese. Super yummy and low in cals!

    Around 2 1/2 days into water fasting. Ending it this morning by steaming up some chicken with broccoli, carrots and green beans. Gonna make it a bit spicy.

    Tuscan chicken with spinach and sundried tomatoes over penne and with garlic bread. Not low cal, but it still fit in calories and macros!

    Skipped out on having a sweet potato last night, so I'm having one for breakfast, along with some chicken tenderloins and cauliflower. All steamed.

    I am the weekend cook and planning to make beef lok lak tonight. It is a good way to have a low carb meal. It is often served with rice on the side, but I don't miss it if I don't have it. It's also often served with a fried egg on top.

    Dutch bitterballen in the air fryer. These are like croquettes but are liquid when you bite into them.
    I used a hacked recipe, thickening a tin of beef stew with extra roux and adding gelatin. The classic recipe is a lot of work.

    I made corned beef brisket with potatoes and cabbage in the crockpot. My fiance and I are finishing off the leftovers for lunch today.
