Hubby cooked Dutch andijvie stampot and rookworst.

Chicken Parmigiana (baked) over arborio with roasted butternut squash. About 600 cal.

400ish calories of Trader Joes gluten-free tortilla, Daiya cheese shreds, and some sour cream and mild salsa [before anyone is confused: I’m dairy-less not dairy free, so one of the few real dairy products I have is sour cream]

Last dinner out before lockdown tomorrow.

Copycat KFC done in the air fryer with the Chicago Tribune recipe for the 11 herbs and spices. Copycat Kraft dinner using cheddar cheese powder. Turkish watermelon and feta salad.

Broccolo Romanesco, speck (a salty ham), EVOO, and feta.

Tropical-inspired chicken and sticky coconut rice. I cooked down the marinade with a little cornstarch slurry and made it into a delicious, extra sauce.2 -
Baked potato with stilton butter on the side, lamb cutlet, waldorf salad lightened with a mixture of yoghurt and ranch instead of mayo.

I made cardi augratin tonight. They are in the artichoke family but have stalks like celery.

Steamed artichoke with lemon butter as antipasto. Primo of linguine alla vodka, which is more American than Italian. It was crazy busy at work today so I was logged on until late, but with a little coaching, hubby managed to produce dinner.

It's been nuts with Xmas meal planning.
Originally scheduled to host two Xmas dinners on the day itself as well as Boxing Day with two different families visiting. Ordered two geese with delivery dates Dec 23, and Dec 24. Then London went into Tier 4 lockdown this week with all social visits banned. Gave away one goose on Dec 23 to the family that were planning on coming on Xmas dinner at our place we didn't have enough room in the fridge\freezer for two geese and they didn't have enough time to order something nice to cook at Xmas. Then on the afternoon of Christmas Eve, got an email that the online butcher would not be delivering my Christmas goose after all due to logistical problems. We had been working all month on emptying the freezer to make room for goose so there was nothing in the house to eat for the weekend. I popped into the supermarket and could find a gammon to cook for Xmas. Then at 17:00 in the afternoon of Xmas eve a goose arrived at the door.
So tonight we ate some gammon and will figure out what to do with the goose tomorrow. Starter of salad with blue cheese, candied nuts and roast pears. Sides of mushy peas, cheese biscuits and apple sauce.
