I may have misunderstood what you meant by struggle meals. I thought you meant quick/lazy/comfort food because stress
I wasn't 100% sure either.
Quick/lazy meal = bag salad with some kind of protein that doesn't need to be cooked tossed in
Cheap/comfort meal = cream of wheat or instant oatmeal and toast0 -
Are we talking struggle as in keeping costs down? In college I was all about the beans. Beans and rice...12 bean soup with ham, bean burritos, 3 bean chili with ground beef, etc...
Also, potatoes...potato soups, baked potatoes, ground beef and potatoes...
Various pasta dishes, eggs, oats...anything cheap.1 -

My favorite cheap meals are black beans and rice, oatmeal, grilled cheese sammies with tomato soup, and mac n cheese
None of which i buy at costco 😌
That too! I actually forgot I made this thread last night in a medicine induced haze. I was craving cheap cheesy tuna helper at the time.1 -

Struggle meals to me mean anything made on the cheap, but some are great no matter the cost!

All I know is somewhere in between paying the overdue utility bill or putting some lunch in your belly is a compromise everyone in the struggle has had to make, and that compromise is Ragu meat sauce on top of an empty toilet paper tube. 😧2

Times are tough right now! What are some of your favorite struggle meals?
Okay, since you've clarified "struggle" to mean "inexpensive" and maybe "easy", I can whittle my list down:- Mac n' Cheese and Hot Dogs (auto go to, I know this is terrible)
- Sleeve of Ritz Crackers
- Cans of questionable at best soup
- Bowls of cereal or those dumb packets of pre-mixed oatmeal
- White rice and eggs + veggies (like fried rice, but not actually fried or coated in soy sauce)
- Fried baloney sandwiches
- Peanut butter and jelly sandwich.. or a banana if I have one

So, I was bumping around online and found a local restaurant that I've always wanted to try.
I pulled up the online menu and it looked pretty good.
It was a little spendy, but nothing crazy. Until I read the section of steaks.
They offered Kobe beef priced at $68.00 an ounce, with a minimum size order of 3 ounces.
That's $200.00 for just the steak, never mind a salad, side dishes or beverages.
Instead, I reckon I'll just keep dining at the Taco Cabana.5 -

I love biscuits! I like them plain or with butter. They're nothing like a donut. You can make them into the breakfast sandwich too which I guess is Imago's addition of mustard 😑2 -

This whole biscuit discussion is making me crave Pine State Biscuits, not at all a struggle meal (except in terms of struggling against debt and obesity).
My favorite is the Chatfield. They also have fantastic fried green tomatoes.
Biscuits and mac and cheese have really gotten a makeover the last few years as glamour foods.
I remember when there was no food in the house I would sometimes mix flour, water, and salt and eat the raw dough to fill my belly. Almost a biscuit. A sad, shameful biscuit.6 -

I'm not saying that, before 2020, I've driven 2+ hours to the next province over on a Dedicated Day Trip for a bucket of Popeye's with extra biscuits which would be then used to create impromptu greasy chicken sandwiches on the drive back. It's just that I know of people who do and then freeze any extra biscuits as Sunday morning treats loaded with generous pats of lactose-free butter. 😬

7 up!? This sounds complicated and time consuming. And think of the greenhouse gases emitted from the creation of a can of soda pop!
