My kind of cooking! This inspired me to buy 3 kinds of salad today plus boneless pork ribs. I already had some broccoli.3 -
Crazy combination tonight because we are out of nearly everything and need to go food shopping. Air fried lamb chops coated in za'atar (this is my favorite way of doing lamb chops now), avocado and mashed potato w/onion, spinach, butter and smoked paprika. I liked the paprika in it as it made the potatoes taste smoky.

Spiced Carrot & Butterbean Soup with Lentil Chips - which is how I eat my soup these days, usually. Today I added a freshly cooked mini Naan - made a big batch to go with a hot and sour curry for my husband and couldn’t resist taste testing one!
The rest will be in the freezer safe from temptation! 😂 It was good though!

Hubby cooked. Dutch zuurkool stampot (=mash with sauerkraut) with rookwrost (=smoked sausage) and some salad with ranch.

Courgette stuffed with a spicy Mediterranean mixture with Feta and olives, drizzled with oil free pesto and hot sauce. Plus my usual big salad. 😋

Pork chop coated in za'atar, mashed potatoes w/onion, butter & smoked paprika, cherry tomatoes and chopped salad. We are completely addicted to za'atar as well as liking the flavor of the potatoes w/smoked paprika.

Bulgogi minced beef bowl on sticky rice, smashed cucumber salad with commercial Japanese sesame based salad dressing. There was some pickled carrot and cucumber rind lurking at the back of the fridge. This is a meal than can be whipped up in the 20 minutes it takes rice to cook.

Ras el Hanout Roasted Vegetables topped with some very crumbly Falafel from the freezer, with spiced rice and a Ras el Hanout Skyr dressing.

Slider sized turkey patties, black beans w/onions, cherry tomatoes and chopped salad. I bought ground turkey on a whim as it's not something I typically get. At 93% lean it was better than I expected. It worked well with the beans.

Hubby picked up a takeaway lunch but the shop assistant mixed up the order. I ended up with green curry prawn when I wanted prawn pad thai, the hubby wanted chicken green curry but ended up with chicken pad thai. The green curry was a bit too rich with coconut for my taste. We couldn't swap because the hubby can't digest shellfish.

Dinner in less than 10 minutes. Pan fried sea bream (2 minutes skin side down, 1 minute on the other side), air fried baby asparagus (8 minutes total was a little overcooked), tinned butter beans warmed up with some bisque and edamame we had in the freezer.

Green beans from my garden, pasta roni white shells and cheddar, overdone steak (I need a new thermometer, it said this steak was 120, lol).3 -

Oven baked chicken drumstick, potatoes, onions. Cherry tomatoes and Caesar salad. Chicken was my usual shake & bake w/gluten free flour and curry powder.

I made homemade naan a couple weeks ago for the first time to go with our curry and it was AWESOME. Not hard to make either! I’ll be making it again soon.
I also made a runza for the first time. I had no idea what it was until I looked it up. Any Nebraskans out there want to share some tips and tricks? They were good but next time I’ll make a moister filling and roll the dough thinner. For a first crack at something I’ve never even heard of though, they came out yummy!

Dak dori tang warmed up from a batch braised a few weekends ago and popped into the freezer. Frozen shelled edamame sauteed with garlic. Basmati rice.

My partner and I experimented tonight. Grilled beef patties mixed w/togarashi & yuzu ponzu, rice cooked in coconut mango water, corn & edamame sautéed in butter/sesame oil, nigori sake. Added wasabi powder, rice seasoning, black sesame seeds and yuzu ponzu to the rice. It actually tasted good in spite of the weirdness of the ground beef.
