Dinner was leftover reduced fat tempura of sea bass and daikon from yesterday. I pan fried fish and veg yesterday just enough to harden the wet batter, then finished for 10 minutes at 200C in the air fryer today, Dessert of blueberry pavlova was made for friends who were meant to drop by but didn't make it. It was a skinny-ish version with a third of the sugar replaced by splenda in the meringue base, and whipped cream replaced by no fat yoghurt.

Sunday dinner:
Salad of green leaf and bibb lettuce, 1/2 avocado, shredded Mexican chicken (cumin and ancho chili powder), shredded cheese and a drizzle of salsa

The first one is a Tuscan Salmon recipe I got from Pinterest. It was one of the tastiest things I have ever eaten in my life.
The second dish is Cuban black beans, rice, and garlic shrimp.
The third is an egg and veggie breakfast I made.
I’m Pescetarian but eat a lot of vegetarian meals too.6 -
The first meal is homemade Korean BBQ at my friend’s house. She is a professional chef.
The second was ceviche I made from crab and shrimp, with tortilla soup.
The third is an Indian meal I made with Tandoori shrimp.

The first meal is a vegetarian version of a Persian herb stew from an amazing restaurant in L.A.
The second is grilled seafood, greens, rice/beans, and zucchini from my garden.
The third is not a meal, but was delicious: pineapple margaritas.9 -

Monday night - light dinner:
Chicken soup (mirepoix of carrots, celery and shallots, garlic roasted riced cauliflower, chicken, bone broth, salt, pepper, thyme)

The rest of the family wanted chicken fingers and fries last night so I made mine into hot buffalo chicken lettuce wraps. They were filling!

I love to bulk up my eggs with veggies, this one has onions, mushrooms, and zucchini made with 1egg plus 2 egg whites and some jarlsberg cheese. Including the slice of 647 bread it’s 258 calories!

Tonight's dinner was geographically all over the place. Retired dairy goat sausage, roast potatoes, puy lentils cooked Italian style, sauerkraut, daikon with a miso and mirin sauce.

Tuesday night dinner:
Rough chopped salad, small bowl chicken cauliflower rice soup and an Artisan dinner roll

Last nights dinner: Cabbage and shredded chicken sautéed in toasted sesame oil with black rice. Rice topped with rice seasoning and ponzu. Chicken/cabbage topped with togoroshi, black sesame seeds and more ponzu. Chicken simmered in water with five spice powder, garlic and seasoning. My partner wondered why there were no onions in the chicken mix. He likes them in everything. Normally I would have added them but I forgot this time.

Air fryer copycat KFC from the Chicago Tribune recipe but messed up because I forgot the ratio of spice mix (which I make in advance) to flour so the coating was too thick. Air fryer roast potato, sauteed asparagus and a side salad with ranch.

Egg, mushroom, cheese, spinach/lettuce, over a onion smothered turkey pattie between two toasted brioche buns + dash of scorpion Tabasco

Lamb patty and tri-color pearl couscous w/cherry tomatoes, cucumber, mint, basil and olive oil. Topped with pan fried halloumi cheese. First time I bought halloumi though I'm pretty sure I've had it in restaurants before. We liked the toasted flavor that frying gave it but next time we'll try it on the grill.

I’ve been a bit obsessed with Beetroot recently and here’s todays iteration. Beetroot Dhal, served with Basmati Rice bulked up with Petit Pois, with Extra Fine Beans and a microwaved Red Chilli Poppadum. One of the best Dhals I’ve tried.

Did the air fried croquettes again. Fish balls with salmon, mashed potatoes, egg and seasoning. The other with mashed potatoes, egg, sage and pecorino. I meant to add prosciutto but forgot! All balls rolled in gluten free panko (Ian's Italian Panko). I got much better color this time around so I think I've got the timing down now. Need to work on my size uniformity. I love these. They aren't as good as fried but they have good crunch and are far less caloric so I count it as a win.

Husband got home after a week away last night so I made my lasagna (which has been passed down by several generations of northeast Italian women) and garlic bread to welcome him home.
While he was gone my toddler and I had a girl’s lunch out and I got a salmon BLT. It was delicious; my only gripe was the shape of the salmon cut which made it very unwieldy to eat!3 -

Friday lunch with my sisters at a local restaurant. Caesar salad, no croutons, dressing on the side, added grilled chicken
Dinner: Spinach lasagne, peas and a cauliflower garlic bread stick

Vegan Sausages (Heck’s Vegan Italia), Celeriac Fries & Salad. Oh and a ketchup - I’ve never been big on ketchup but for some reason was fancying it tonight. 🤷♀️
