Today's dinner: Spaghetti sauce over spaghetti squash with melted Italian 5 cheese blend and a cauliflower garlic bread stick. (This is probably 2 servings - I'll save 1/2 for tomorrow's lunch).

Grilled linguiça, rice, black beans w/onions added, collard greens cooked w/bacon & onions. As usual the sausage was made in house at one of the butcher shops I go to.

You can make a fat free version of tortilla chips in the microwave. Remove once they start to brown a little as the margin of error between browning and burning is small. Don't fret if they are not crisp when you remove them from the microwave. They turn brittle as they cool.

I’ve done similar, many times, with leftover corn or flour tortillas. I cut them into eighths and dry fry in a frying pan until lightly browned and crisp.
Not sure why you suggested it though! I was just using up Doritos (bought for guests) in a way that fits into my calories, not looking for alternatives to Doritos. 🤷♀️ The calorie difference is minimal anyway - it’s the tortillas themselves that would tip my calories over not the non existent fat I’d not be using anyway…😂1 -
We'll be having a cooking puzzle for dinner. A Chinese girlfriend brought over a recipe kit for a Chinese fish and sauerkraut on dish on Christmas Eve as a hostess gift. There are English directions on the back of the packet, but when I opened up the kit there were 4 satchets of different pastes and seasonings that needed adding at different times labelled in Chinese only. I'm illiterate in Chinese, so it took a while to figure out which sachet is which.

Sichuan fish fagrant shredded pork, leftover sichuan fish stew from last night, roast chicory, sticky rice.

1/2 Filet Mignon, greenleaf lettuce, shredded carrot, shaved cucumber, avocado side salad and a cauliflower garlic breadstick. 1/2 cup fresh pineapple for dessert (perspective is off between the two pics) 😑

Zucchini “noodles” with portobello and beef sauce. Side green salad with a few peanuts for crunch and a honey Dijon dressing.

Breakfast for dinner: bacon, fried potatoes w/rosemary, fried eggs (over easy) with Cholula hot sauce (jalapeño & plobano peppers) and cherry tomatoes.

Happy new year! This was Christmas Eve dinner; strip steak, roasted brussles and mashed potatoes.
Christmas dinner was a truly amazing charcuterie board by yours truly, but like I dunce I only took video and not pictures!

Lemon parm salad and spaghetti alla carbonara using the rest of the bacon and some pecorino rather than guanciale and parm because that's what was in the fridge. I think this is only the second time I've ever made this pasta dish and it seems to have turned out OK. In any case it was delicious.
