Breakfast for dinner: bacon, fried potatoes w/rosemary, fried eggs (over easy) with Cholula hot sauce (jalapeño & plobano peppers) and cherry tomatoes.

Happy new year! This was Christmas Eve dinner; strip steak, roasted brussles and mashed potatoes.
Christmas dinner was a truly amazing charcuterie board by yours truly, but like I dunce I only took video and not pictures!

Lemon parm salad and spaghetti alla carbonara using the rest of the bacon and some pecorino rather than guanciale and parm because that's what was in the fridge. I think this is only the second time I've ever made this pasta dish and it seems to have turned out OK. In any case it was delicious.

Frittata with Tasmanian ocean trout, greens, peas, Romanescu & haricot verts.

Decadent dinner calorie wise. Sea bass and carrot tempura with dipping sauce. Sides of rice, Sichuan blanched courgette salad, Japanese pickled celery and daikon. I have been experimenting with making tempura lighter. For the batter I used 2 parts rice flour (which absorbs less oil than wheat flour) to 1 part potato starch (which lends brittleness). I have been frying very hot for just a few seconds to harden the batter. Afterwards I finish in the air fryer. Next time will see if I can do the hardening step in scant oil in a non stick pan. You can't put a wet batter in the air fryer which will just blow the batter around. Cooking tempura in two stages reduces the stress around timing, for something that normally needs to be served immediately.

Multigrain French toast with pure maple syrup, sausage and coffee

Homemade salt beef we had in the freezer that had been cooked sous vide, dutch zuurkool stampot (mash with sauerkraut), glazed carrots, celery braised in the broth in the sous vide bag, roasted daikon.

Variation on a tuna melt using gluten free baguette and tuna mixed w/Primal Kitchen Chile Lime mayo & capers topped with shredded pecorino cheese.

Starter of half a roast cauliflower with alioli. Main of beef hor fun.

Starter of the other half of last night's cauliflower with alioli. Main of rice with air fryer Dongbei Guo Bao Rou. I have finally figured out how to do wet battered recipes that normally call for deep frying in the air fryer. Pan fry the wet battered food in batches of a single layer for a few seconds with a scant amount of oil in a non stick pan to harden the batter. Then finish in the air fryer.
