Took pictures of breakfast and supper today.
Breakfast was a few potatoes loaded with scrambled eggs, red butte hatch cheese, bacon bits, Greek yogurt, jalapeños, and after the pic I added some cholula hot sauce.
Supper was a turkey burger served in romaine with red butte hatch cheese, tomato, jalapeños, and sweet relish. Dessert was a small bowl of homemade vanilla bean ice cream.

Vegan Szechuan including Di San Xiang where potatoes and aubergines were cooked first in the air fryer instead of the deep fat fryer. Ma Po Tofu where I just left out the small quantity of ground pork. Most vegan recipes for this dish add shitake mushrooms for umami so I should probably try that next time.

Smokey Bacon tempeh, Heirloom tomato, Kite Hill Chive " cream cheese", Vegan Queso, Nutritional yeast, dash barbecue sauce, spices and herbs on Ezekiel bread.

Back in town after a week on the road with less than stellar meal options. I just finished my Wednesday brunch:
Coffee and a little rolled oats to go along with what are probably some of the last strawberries from my garden this year (maybe 1/2 cup)

Wednesday late lunch: Grilled cheese (cheddar on 10 grains & seeds artisan bread) and most of these peach slices)

I was feeling a little ill so we got a Thai Deliveroo.

Wednesday Thursday dinner... 🤦♀️(I've been thinking it was Wednesday all day.) I watched a one-year old so his mom could participate in a late day work meeting. She paid me in food. 😁 Crock pot roast beef, potatoes, carrots and parsnips

Friday late snack... first meal of the day at almost 2pm (I wasn't hungry before this).
The last 2 frozen Keto blueberry pancakes from a batch I made a couple weeks ago plus 5 strawberries from my garden. (And coffee - but that usually goes without saying.)

Friday small plate dinner: salad of red leaf lettuce, jicama, cucumbers and avocado with a (not shown) drizzle of Catalina dressing, blackened Mahi-Mahi and a side of sautéed garlic green beans.

Saturday lunch: PBJ on gf sourdough with coffee (I had ulterior motives. I want to put coconut oil in that mini jam jar to take with me on this next job out of town.)

Chicken veggie bowl on rice. This was my first time poaching chicken. I don’t hate it.4 -
Trying to use up some odds and ends. Pork loin, rice cooked in chicken broth, black beans, crispy chickpeas, roasted sweet potato and carrots, and some pickled asparagus I made a while ago. The goop is basically just tahini, sugar, vinegar and garlic thinned down with water.

Another weird leftover dinner. Black beans and roasted corn, home made pickled carrots, rice cooked with chicken stock and a ton of garlic, and cold pork loin with sweet thai chili sauce.

Eating out this week while visiting old home town of Amsterdam. Our old place is rented out so we are staying a hotel the precludes cooking. Moules frites on our first night.

Lazy today. 6 ounce sirloin, roasted corn, bussel sprouts and broccoli. Steak was good, veggies were eh. I should have added balsamic or something.

Homemade broccoli soup topped w cheese and hot sauce. This is my second time making it and it turned out pretty good! I didn’t have to cook up some bacon to make it edible lol5 -
Prime ribeye and salad of romaine, campari tomatoes, cucumber, capers, olives & avocado drizzled in olive oil. Everything topped with blue cheese. Trying to recover from vacation with nothing but protein and salads.

Our hotel is in the Pijp, a traditional working class neighbourhood where the small, inexpensive apartments became popular with students and young singles since the 90s. The neighbourhood is now full of bars and eateries that appeal to young people. The sampling platter at the Tibetan/Nepalees cafe near the hotel.
