Marinated & poached chicken breast (own recipe) plus green beans cooked in olive oil, chicken broth, white wine, and lemon juice.
Braised leg of lamb Cleopatra (recipe by Daniel Boulud). I doubled the fennel (because why not), left out the jalapeño, and forgot to include the parsley then I shredded the meat and divided it into portions to eat during the week. I also omitted the side of couscous. There's a glorious amount of warming spices in this dish, great for the colder weather.
Collard green salad with chicken, bell pepper, and roasted butternut squash -- yum! For anyone who prefers to eat vegetarian: this would be delicious without the chicken too. Dessert of raspberries & pistachios.

We went to a fancy restaurant where hubby had men of the wood mushrooms and leek followed by egg yolk raviolo with truffle shavings. I started with venison tarter made with grapes with a cep cracker followed by duck three ways. My desert was chestnut ice cream, poached pear, marsala sauce with a praline dissolving in it. Hubby's desert of gelato made from Tunsworth cheese (=English camembert), grated truffle and spoonful of aged balsamic was epic.

A grilled meditarranean dinner that was very quick to pull together. A chicken breast sliced into two thin pieces was coated in olive oil and grilled. A quartered radicchio and sliced courgette were tossed with melted butter and SE Asian fish sauce and grilled. I was trying to recreate a roast veg dish I had on vacation in Tuscany that tasted of anchovy. Bulghur cooked in stock I had in the freezer. Some leftover chimichurri/zhoug/gremolata type sauce we had in the fridge from the last time I pan fried fish.

🚗 Currently traveling in southern US - Blue Ridge and Smoky mountains.. Had the best northern Georgia trout ever. 🎣
🍽️ 🐟 Fresh caught in the Toccoa river and stuffed with crab. Squash and green beans on the side.

Lunch -
Kale & chicken sausage, bell peppers & onions. A few strawberries for dessert.
To share: A homemade cauliflower crust pizza with buffalo mozzarella & san marzano tomatoes.

Beef rendang, pickled carrot, cucumber salad with black sesame dressing, rice. A little chocolate sorbet for dessert.

Chicken caesar sandwich and (not pictured) a piece of a butter rum cake that was very dense and dry.6 -
A girlfriend popped over for dinner. Salade caprese with roast paprika followed by linguine puttanesca. We had a little chocolate sorbet for dessert not pictured.

Air fryer wings using the Chicago Tribune copycat KFC recipe. Roast new potatoes, celery sticks and blue cheese sauce.

Cheese souffle made in the air fryer, green salad, pickled beets and onions from a jar, toast.

Lunch: Faroe Island Salmon on a bed of citrus fruit and hearts of palm.

Chinese tonight. Stir fries of chicken with celery and snow peas with Chinese sausage. I am amazed in retrospect that my mom served 3 stir fries on most nights growing up. Sometimes her 3rd dish would be a braised/stewed dish that could be served a few days in a row. I find doing 2 stir fries stressful enough.

Bed of herbs/mixed vegetables 🥕 🥬 and Okinawan mozuku (dulse) topped with a fried egg.

Thursday dinner: marinated wild caught Alaskan salmon over Jasmine rice with baby sweet peas

The hubby likes to eat out on Friday because it makes the weekend feel longer. A not so great dinner at a Greek chain restaurant with a branch nearby.
