    I agree, this sounds absolutely delish! Oh, I bet this would be great with spinach as well............I just love to modify recipes:laugh: I came up with 7 - 1 cup servings at 286 cals per serving....................no other nut. info. ....did not have time. What a great dinner idea!

    With your difference in calories did you put in skim milk instead of the 2% she used?

    I put it in the recipe calculator as the entire thing serving 6 people and it came up with this...

    Calories - 365
    Fiber - 8
    Fat - 5
    Sodium - 518
    Protein - 25

    Laughing Cow Alfredo

    4 wedges The Laughing Cow Light Creamy Original (I used the light garlic & herb flavor)
    2/3 cup skim milk (I used 2% because that is all I had)
    1 Tbsp fat free parmesan cheese
    1tbsp smart balance light
    6 cloves minced garlic (I used less because the cheese was garlic and herb)
    1C 1% cottage cheese
    1C roasted red peppers (I did not use red peppers because I didn't have any)
    2C broccoli
    1boneless/skinless chicken breast (I used 3 - 4oz chicken breasts)
    1 box Whole Wheat Rotini pasta

    Instructions

    In a medium-sized saucepan, combine all the ingredients over a low heat, until everything is melted and the sauce is velvety smooth, about 20 minutes. While sauce is cooking, cook the pasta, chicken, broccoli. Then mix it all together!

    That's part of the reason I put crumbled bacon on top...he loved it! The only comment he had was that the noodles tasted different (that's because I am only going to buy whole wheat from now on)...but he still liked it!

    "Bump" bumps the post up to the top. It also leaves it in your posts you've commented on so you can find it easily :)

    I calculated the recipe with items substituted as follows:

    Unsweetened Almond Milk instead of Skim Milk
    Smart Balance Light instead of Smart Balance original
    Fat Free Cottage Cheese instead of regular cottage cheese
    Dreamfields Rotini (using the 130 Net Calories MFP database entry) instead of Whole Wheat pasta

    The total calorie count ended up at 256 per serving, six total servings.
