spinich salad with mandarin oranges
having a snack in a little while...needed a lite luch as I did a 45 minute run actually on my 'lunch break'.0 -
mine was weird today.
I didn't want to have meat (going to a company bbq
tonight and am freaking out about the calories BUT
have it all planned out to a Tee AND my husband
will be with me - he's a good motivator).
today for lunch I had 2 Ry Krisp Multigrain crackers
with smashed avocado and sliced tomatoes on top.

I wish I could find a lower calorie tortilla that I actually liked. I've tried the La Tortilla Factory ones, but they just seem kind of cardboardy. The whole wheat one is 170 cals, which is a bit high, but they taste so much better!
Have you thought about trying corn tortillas? I eat the El Milagro corn tortillas and they are great. Although I do have to confess that I grew on these as I am 1/2 mexican!0 -

1/2 cup baby spinich
1/2 cup chopped romaine
3 radishes sliced
1/3 cup yellow bell pepper diced
1/4 cup seedless cucumber sliced
dressing:
1 tsp olive oil
dash cayanne pepper
dash sesame seeds
1/2 tsp fresh dill
tossed all togeather...very yummy!0 -
Hope you'll try this hummus recipe, adjust the ingredients as needed.

Ingredients:
1 16 oz can of chickpeas or garbanzo beans
1/4 cup liquid from can of chickpeas or garbanzo beans
1/3 cup lemon juice (depending on taste)
2 tablespoons tahini (important ingredient,don't substitute, but may be omitted)
2 tablespoons olive oil
2 teaspoons cumin
dash of red pepper flakes
3 cloves garlic, crushed
1/2 teaspoon salt
Preparation:
Drain chickpeas and save liquid from can.
Combine remaining ingredients in blender or food processor.
Add 1/4 cup of liquid from chickpeas.
Blend for 3-5 minutes on low until thoroughly mixed and smooth.
Serve immediately or cover and refrigerate.
Variations: Add pine nuts, cilantro, sun-dried tomatoes, or roasted red peppers to recipe.
Serve with: Cut vegetables, crackers, pita triangles.
To make pita triangles: Cut up some pita bread into triangles. Bake at 350 for 8-10 minutes.
Suggestions:
Serve with garnish of parsley or sprinkle paprika on top.
Serve with thinly sliced carrots and celery tucked together on the side.
Use as spread in place of mayonnaise.
Storing Hummus:
Hummus can be refrigerated for up to 3 days.
It can be kept in the freezer for up to one month.
If the hummus appears to be too dry, add a little olive oil to it.0 -
