I add broccoli and garlic to mine as well. I slap chop it all up. Throw it in a pan to warm it up and boom! Perfect rice side dish. My other half likes it more than rice!0

You could try using a vegetable ricer instead of a food processor to yield more uniform grains.0

I love rice; even though I try to eat not more than 1/2 cup (300 calories I believe), I will definitely try this.. also post the recipe for the shrimp dish.. we live out of New Orleans, & have lots of option for seafood.. thanks, dbye0

I LOVE mashed cauliflower! I only get it at my parents' though. I don't have a food processor. Does a blender really work? I have one of those!0

I use caulil for a mashed potato replacement too! Quinoa is pretty good replacement for rice too.0

I used to do this (as rice & mash) when I did the Atkins diet, and I'd completely forgotten about it until I read this thread, so THANKS!
Quinoa is higher in cals than rice (as I discovered today when making a 'healthy' salad for work lunches).0 -
I've been doing the caulimashed potato version for years. Makes a great sheppards pie topping. But this is a great idea as well. Thanks for sharing!0
