    cauliflower is the best sub for carby/starchy cravings ever!!!!

    I make cauliflower "spaghetti", "stroganaf","nachos" etc. (i.e. cauliflower is my potato, my linguine, my egg noodles, my chips, my crust, my dough....

    I love cauli, so gonna give it a try, but was thinking of adding tomato sauce and maybe some peppers and onions to it, but if I do, wouldn't that make the cauli turn to mush, caused from the sauce?

    I used to do this (as rice & mash) when I did the Atkins diet, and I'd completely forgotten about it until I read this thread, so THANKS!

    Quinoa is higher in cals than rice (as I discovered today when making a 'healthy' salad for work lunches).

    Maybe so about the calories in quinoa but I was thinking so far as healthy for your body... Quinoa is protein packed and for me, more easily digested.

    Cindy - the secret to getting the rice texture is to microwave the cauliflower without any added liquid.

    You could add sauce after cooking.

    My paleo palz turned me on to this a while back. DH improvised an outrageously tasty "spanish rice" -- sautee with turmeric, smoked paprika, bell pepper and peas. A giant bowlful is like ... no calories. Enjoy!!

    After you cooked cauliflower microwave did you mix with shrimp or did you just put shrimp on top of it, on your plate? I love shrimp fried rice and I will try this over the weekend.

    I'm going to try this for my lunch today. I have some leftover green bell peppers & onions that I had cooked on the stovetop last night, so this sounds delicious all mixed together with some chicken pieces. Thanks!

    Bumpin. I switched to brown rice instead of potatoes and pasta as a side for everything, but for meals where it's the base it should be would nice to not have to be sooo careful about portion.
