I think any dry ranch will do. I know we have the hidden valley dressing (not drY) becauseI have it..
as for ROTEL, it's a diced tomato w/ chilli's or something but I can't find it yet...0 -

I made this a couple weeks ago and my family loved it. I didn't go out and buy Rotel. I just used a can of diced tomatoes and chopped up some peppers I had frozen from my garden.
I don't normally buy dry ranch packets because they have MSG in them but you could use this recipe for homemade ranch seasonings and just add it to the crockpot instead.

If you like pork try 1 package of boneless pork chops trimmed of fat, there should be about 3-4 chops in the package, 1 can of cream of mushroom soup, black pepper and 1/4-1/2 teaspoon sage. Put it in the crockpot on low until the chops are done, 4-5 hours probably. I serve it with mashed or roasted potatoes, a green salad, peaches, etc. Tasty and ridiculously easy. Plus the kiddies like it.0 -

Hey guys!
In January alone, I've made this recipe THREE times for my fiance and I.. it is literally that good!
Crockpot cheesey chicken chili
1 can black beans
1 can corn, undrained
1 can Rotel, undrained (I use 2 cans and the kind with green chilis)
1 package Hidden Valley dry ranch dressing mix
1 tsp cumin
1 Tbsp chili powder
1 tsp onion powder
1 8 oz package light cream cheese (I used 4oz FF and 4oz light)
2 chicken breasts (I used 3 breasts)
Drain and rinse black beans. Place chicken at bottom of pot, then pour out whole can of corn (undrained), rotel, and black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve. (We add some Franks Red Hot to give it some spice!)

For the specific ingredients I used, the breakdown is: 216 calories, 7 fat, 20 protein, 18 carbs, 646 sodium and 7 sugar PER 1 measuring cup. My pot made 9 cups worth.
