A previous poster asked if there is any diet soda taste in the finished product, and I'd like to know the same thing. The concept sounds interesting, but I'm not keen on having a cake that tastes like pop.
I have made these for years. I never tlel anyone this is how I make them and no one knows the difference. So the short answer is NO, they do not taste like soda at all.
My SIL uses diet coke (or even diet cherry coke) in chocolate cake. Dark soda for dark cakes, light soda for light cakes.
If you use Cherry or maybe diet dr. p it will have some of that flavor in there.0 -

I have heard that you can try a darker cake mix(chocolate) with diet coke and that it has an after taste like diet coke does. I haven't tried it to be totally certain though. I'm so happy with the one's I make I haven't really experimented with anything else.
I will tell you guys this! having those cupcakes there is super tempting so before I went to smaller cupcakes I baked half and the rest of the cake mix was placed in the fridge for a few days in a zip lock bag and it baked well even after being placed in the fridge. :flowerforyou:0 -

Awesome! I'll see if I can get my hands on some Diet Pepsi tonight. We have tons of boxed cake mixes here, so I doubt anyone will notice if I use one to experiment.0 -

I have made these with choclate and a diet cherry pepsi. Can definately taste the pepsi. They were ok, but my husband and kids did not like them. Want to try with a strawberry cake mix or cherry cake mix with dt sprite or some dt rite in that flavor0

Has anyone tried this with stevia-sweetened diet pop? I can't take other artificial sweeteners for medical reasons, but I can tolerate stevia. Wondering if it would work with stevia cream soda or if the slight licorice flavour would be too overpowering!0 -

Ok now I MUST make these this weekend. I am thinking a Devils food mix with diet cherry pepsi or Diet dr. pepper. topped with chocolate cool whip free and a cherry on top of each :bigsmile:0

I don't know but aspartame already turns into formaldehyde when you drink it anyways......
The following facts are shown by recent scientific research:
Aspartame (nutrasweet) breaks down into methanol (wood alcohol).
Methanol quickly converts to formadehyde in the body.
Formaldehyde causes gradual and eventually severe damage to the neurological system, immune system and causes permanent genetic damage at extremely low doses.
Methanol from alcoholic beverages and from fruit and juices does not convert to formaldehyde and cause damage because there are protective chemicals in these traditionally ingested beverages.
The most recent independent research in Europe demonstrates that ingestion of small amounts of aspartame leads to the accumulation of significant levels of formaldehyde (bound to protein) in organs (liver, kidneys, brain) and tissues.
Excitotoxic amino acids such as the one which is immediately released from aspartame likely increases the damage caused by the formaldehyde.
