Try skinny crock pot. It is a great site full of healthy crock pot recipes. Start with the Balsamic Chicken. It's great!

I guess it's not really a recipe, but at camp I threw about a dozen peeled, cored apples and water into a crock pot and stewed them into apple-butter. A pretty healthy spread for sandwiches and toast. Super, sweet and a good additive to oatmeal, cookies, etc.

This woman's site has AMAZING, low-fat, and simple foods. Have tried so many, and many are fast and/or crock pot.

    Grey Steaks

Boneless pork chops (trimmed of fat - optional, the cooking process softens it so you can peel the little bit of fat of the cooked meat when it's done)
    Cream of mushroom soup
    Black pepper (optional)
    Sage(optional)

Place the pork chops in the crock pot with the cream of mushroom soup and optional spices. Cook on low for at least 4 hours, though all day is okay too, they'll just completely fall apart by then. The "sauce" makes a nice gravy of sorts for mashed or roasted potatoes. We have 2 adults and 3 small children, one package of chops and one can of soup is plenty for us. Enjoy!

I buy the small boneless turkey breasts. I put it in the crockpot frozen and turn it on low. When we get home it is ready to go...it cooks in it's own juices. Can't get much easier than that.
