Texas Caviar ( Biggest Loser recipe)
One 15-ounce can 50-percent less sodium black beans, rinsed and drained
One 15-ounce can 50 percent less sodium whole kernel corn, rinsed and drained
3/4 cup fresh salsa or pico de gallo (refrigerated, not jarred)
2 tablespoons chopped fresh cilantro
1-1/2 teaspoons red wine vinegar
1 teaspoon cumin
Salt, to taste
Ground pepper, to taste
Hot sauce, to taste
In a large glass or plastic mixing bowl or a large resealable plastic container, combine the beans, corn, salsa or pico de gallo, cilantro, vinegar and cumin. Season with salt, pepper and hot sauce. Cover and refrigerate at least 2 hours or overnight before serving. Makes six 1/2-cup servings.
Made this last night and threw in some leftover rice. Had leftovers today with shrimp but I had it hot instead of as a salad.

Mango Chicken soup
1 can black beans
1 can navy beans
1/2 bag of frozen boneless chicken tenders
1 jar Paul Newmans mango salsa
1/2 bag frozen peppers and onions
2 cups water
1 can white corn kernals
cook in crockpot on high 6 hours or til chicken is tender
serve with ff sour crm.
reduced fat shredded cheddar cheese
crushed white corn chips

1 package steamers brown rice
steamers whole kernel corn
1 can black beans drained and heated
mexican flavor stewed tomatos (2 if you like it soupy)
optional - ground turkey fried with reduced sodium taco seasoning mix
cook all of above
mix together while hot
top w/ a modest amount of WW mexican blend cheese
top w/ some plain greek yogurt0 -

Black bean and sweet potato tacos. There are different ways to do it but my favorite is to roast the cubed/chunked potatoes with a little olive oil, garlic, cumin and cayenne/chili powder at 350 for about 40 minutes. You may have to stir or rotate the cookie sheet once, depending on your oven. Then in a heavy skillet: cook onion in a little more oil til translucent, add a can of black beans and some tomatoes, or taco sauce/salsa, even green salsa is good. Cook off most of the liquid. Put both things in tortilla. Cilantro and queso fresco. Dinner.0

I like to put them in a whole wheat tortilla with some low fat cheese and salsa and if I have enough calories, some light sour cream and/or guacamole. I love mexican food.
Some ground Turkey in there as well. Guacamole has good fats. Solid idea.0 -

Black bean burgers are delicious. I made them and even my beef-loving boyfriend adored them. There's tons of recipes online, so just find one to your liking. Other than that, I eat them in the usual thing... chili, burritos, tacos, quesedillas, etc.0
