3 net carb grilled cheese sandwhich!

You need a small mixing bowl, a fork and a sandwich container or small square storage bowl

In the mixing bowl mix
(this is made from the MIM recipe)
1/4 cup milled flax seed
1 TBSP grated Parmesan cheese (I used the stuff in the green container)
1/2 tsp. baking powder
~stir~ then add
1 tsp. butter
1 egg
mix well and spread evenly in sandwich container or bowl and microwave on high for one minute

let cool for a minute and carefully slice your "loaf" into two slices
Proceed with your normal grilled cheese routine!

My sandwich with 3 slices of cheese(it made big pieces of bread) was 3 net carbs! I could only eat half!

    I clicked this not quite knowing what to expect, but suspecting it'd just be some thing with a bunch of fake or altered products. Nope!! I'm so intrigued by this and I LOVE grilled cheese sandwiches (you can blame them and packaged cookies for my being here, though I'll also credit them with getting me through my very troublesome master's thesis, lol). I so want to try these.

    LOL! I know I never would have believed it either. I am doing low carb more by necessity than by choice and I want to show other people who may need to go this route for health reasons that we can still have the things we love!

    Great tip with the MiM recipe in the tupperware, this looks so good!!!

    Edit: Totally made this for breakfast with some reduced sugar Heinz ketchup

    Double edit: I added this to MFP under "Homemade - 3 Net Carb Grilled Cheese (1.5 oz Cheese, Included Butter for Cooking)", including 1 tbsp of butter for the bread and for cooking and 1.5 oz of cheddar

    Bumping, so I can find this again.

    I really miss grilled cheese and tomato soup!!!!!! It was my go to when I was home sick.

    Made this today in a round bowl and cut it into 4 slices and made breakfast sandwiches! SOOOO yummy!

    For anyone like me that had no idea what "MIM" meant:

    Muffin in a Minute (MIM)

    allowed on Atkins Induction (this is taken from an American site which is why the fibre is deducted)

    Serving Size: 1

    1/4 cup flax meal (8.09 total carbs, 7.6 fiber) which is 30 grams in weight
    1/2 teaspoon baking powder (0.64 net carbs)
    1 packet splenda packet (0.9 net carbs)
    1 teaspoon cinnamon (1.84 total carbs, 1.2 fiber)
    1 large egg (0.6 net carbs)
    1 teaspoon butter

    (total carbs is 12.07, fiber is 8.8; net carbs is 3.27)

    Put the dry ingredients in a coffee mug.

    Stir.

    Then add the egg and the butter. Mix.

    Microwave 1 minute (or more). Take out. slice, butter, eat.
