black beans and eggs were made for each other! I sautee onions and a green pepper, add black beans and chili powder....fry an egg....top a wheat totilla with the egg and black bean,onion & peppers, i add a dab of hotsauce bc i love it!! yummmmmm0

I put them in a crock pot with chicken breasts, rotelle and a bit of cream cheese, cook for about 8 hours on low then serve hot over fresh rice, great power bowl before hockey games0

Ingredients
•1 large onion, chopped
•1 medium green pepper, chopped
•2 teaspoons olive oil
•4 garlic cloves, minced
•1 can (16 ounces) kidney beans, rinsed and drained
•1 can (16 ounces) fat-free refried beans
•1 can (15 ounces) black beans, rinsed and drained
•1 can (14-1/2 ounces) reduced-sodium chicken broth
•1 can (14-1/2 ounces) stewed tomatoes, cut up
•3/4 cup salsa
•2 teaspoons chili powder
•1/2 teaspoon pepper
•1/4 teaspoon ground cumin
Directions
•In a large saucepan, saute onion and green pepper in oil until tender. Add garlic; cook 1 minute longer. Add the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Yield: 8 servings.

1 cup equals 201 calories, 1 g fat (trace saturated fat), 0 cholesterol, 755 mg sodium, 36 g carbohydrate, 10 g fiber, 12 g protein. Diabetic Exchanges: 2 starch, 1 lean meat.0 -

Black Bean Chicken Dip
1 can Black Beans, rinsed
1 large can Chicken
1 can Rotel
4 oz 1/3 Less Fat Cream Cheese
1/2 tsp Cumin
1/4 cup fresh Cilantro
Combine all ingredients in a small skillet and heat until all cream cheese is melted. Enjoy with crispy corn tortillas.
Crispy Oven Corn Tortillas
Cut tortillas into wedges or large strips. Lay out on cookie sheet sprayed with olive oil cooking spray. Then spray the tortillas with olive oil cooking spray and sprinkle with cumin and garlic powder. Cook under the broiler until crispy.

I cook them up with some sauteed onions, veggies (Whole roots frozen grilled veggies-peppers, zucchini) and add in some spinach and a tbsp of tomato sauce or Salsa. Add in some Tex Mex seasoning.
They can then be added to an Ezekiel Wrap with some Salsa and avocado. The Kids love them with some cheese in them too.
I then take the leftovers, heat them up slightly.
Add to chopped Romaine, spinach. Add in chopped avocado, tomato. Add leftover Black Bean mix.
Dressing
Tbsp greek Yogurt
3 Tbsp Mango Peach Salsa (or any other kind)
1/2 tsp Cumin
Its like a Tex mex Salad!.
I also substitute Pinto Beans sometimes.0 -

Finally made some black bean cake last night and it came out pretty good. Super easy to do.
Used:
chocolate cake mix
can of black beans
1/4 cup of applesauce
blend beans to smooth paste
add dry cake mix
add applesauce
mix - it was super thick and almost killed my blender
put in baking dish, top with chocolate chips
bake 350* for 45 mins
I could smell the beans, but otherwise it was super rich and tasty. Not bad.

Mine is super easy and boring (to some). I like black beans with rice and fresh pico on top. YUM! I had this for lunch two days in a row
Sometimes I make black bean soup but otherwise, I'm not that creative... I guess I should check out some of the other responses here for more ideas!0 -

I throw chicken breasts in the crockpot with fresh salsa for about four hours. A half hour or so before time is up, I drain a can of black beans and mix it in. Serve with a green salad. Easy and awesome!0
