    Sure!

    Serves 6

    3 cups dried chickpeas
    3-4 cloves garlic
    1 cinnamon stick
    2 cans chopped tomato
    1 onion
    1/2 tsp cayenne pepper (or however mild/hot you like it!)
    1 tsp cumin
    1/2 tsp turmeric
    1/2 tsp garam masala
    1 tbsp canola oil/olive oil
    salt
    pepper

    Soak the chickpeas in water overnight/8 hours minimum
    Boil chickpeas for 1.5-2hrs
    finely dice onion and garlic and sautee in the oil until translucent
    add all the spices and the boiled chickpeas
    add canned tomatoes
    bring to the boil and then simmer for 25-30mins

    This is really easy and tasty! You can always substitute the dried chickpeas for canned if you don't have as much time!

    Made this tonight:

    Tofu, spinach, beansprout, zucchini and udon noodle teriyaki stir fry. Yummy :)

    I am in love with this. I have been wanting to make udon noodles at my house for a while now

    I had a few misses when I first got the book, but everything I've made recently has been great. I think I was still adjusting to lower fat cooking to so my tastes and techniques needed time to adjust too. I probably use it the most out of all my cookbooks now.

    Google books has a lot of the recipes available online if you want to try some. I recommend the chickpea piccata and cauliflower mashed potatoes, they're excellent!

    Udi's Gluten Free pizza crust along with tomatoes, onions and Daiya "cheese", I had myself a nice little thin crust personal sized pizza. YUMM. The crust is a little dark but I think I had my oven a bit too hot, it wasn't burnt though, still tasted fantastic. I made the other one last night and turned down the oven a bit and it came out great.

    I was craving mac & cheese SO BAD this week but all the vegan, gluten free, recipes I found seemed like A LOT of work. So I opted for a much easier dinner, I cooked some gluten free macaroni, used some pasta sauce, mixed that together, stuck it in an oven safe dish, sprinkled it with the Daiya cheese and crushed rice chex and it came out of the oven the most amazing thing I ate all week.

    Lunch: Wonton Tacos with Garlic Sriracha Aioli Cream. I actually used ShuMai Wraps, which are 80 calories for an ounce (about 4.5 pieces. You can really fill them up! I served it with salad.
