Potato Chips In the Oven... Magic. Absolute Magic.

These are amazing. These have forever changed my life.
Potato chips. In the microwave. WITH NO OIL.
Yeah, you heard me.
This recipe is graciously borrowed from http://www.parenthacks.com/2012/04/microwave-potato-chips.html
Mine looked exactly like the picture, no joke. And I find a way to mess up the simplest of things.
So, how to you make these wonderful, delicious chips?
All you need is a scrubbed russet potato, seasonings of your choice, parchment paper, and a mandolin (unless you're a ninja in the kitchen).
So, you thinly slice the potatoes (work in batches, you'll figure this out pretty quickly).
Next, arrange the slices in a single layer on a piece of parchment paper that will fit on the glass tray of your microwave.
Then, season, and cook until golden brown. It ended up being about 4 minutes or so in my microwave, but WATCH YOUR CHIPS CAREFULLY. If you overdo it, bad things happen. I may have had one burst into flames. No, I am not joking.
Let them cool for a minute, if you can, then eat them all.
Enjoy!

Sounds yummy, maybe I'll try it later. I'm just scared because, for some reason, I am prone to microwave fires. I'm sure my death will be in newspapers one day: "girl dies while reheating leftovers'. So maybe I should pass this recipe along to someone more capable in the house.0

For Christmas I got a microwave potato set: it comes with a small slicer and then a rack to hold up and separate the chips. I must say it absolutely does work--it takes awhile, but the chips come out brown and crispy, not something I was expecting from the microwave. I sprinkle cheese seasoning on them. Mmmmmm!0

Okay, I have got to try this!! I love chips and the only ones I will eat that really tastes like chips are Light Lays but they are made with Olean and I know that olean is not necessarily very healthy. So it would be great to find something with no oil and still have low calories! Thanks for sharing!0

Wow. Just tested them and they are great! I paired with some of this dip:

note: it is not a good idea to forgo the parchment paper and cook them directly on the plate. I had no parchment paper and 2/3 of my lovely chips were not able to be removed from plate!
and yes they are crunchy and yummy!

Apparently sweet potatoes work wonderfully as well.. as I would assume cassava or any starchy root veggie would. Yum yum yum.0
