I make a banana minute muffin in the microwave. Basically it's 1/4 c oats, 1/4 cup egg whites, and one small banana mashed and mix together in a coffee mug. Microwave for 1 - 2 minutes and there ya go. You can substitute berries or raisins for the banana but if you do, add about 1 tbsp of skim milk or it will be to dry.0

On Sunday nights I make a crustless "quishe" that I go ahead and cut into portions and keep in the fridge so that each morning all I have to do is zap it in the microwave for about 35 secs and breakfast is ready! Mornings here with 6 kids are crazy, so it really helps.
This recipe makes 8 portions (my hubby usually has it a couple of mornings or sometimes I even have it for lunch as well).
7 eggs
1/2 cup milk
1 cup shredded cheese of your choice
1 package frozen chopped spinach thawed and drained
Beat the eggs, add in the milk, spinach, and cheese. Pour into a sprayed 9 x 11 baking dish and cook at 350 for about 34 minutes (or until edges are slightly browned and middle is set).
This week I also added green onions, black olives, garlic, and some sauteed bell peppers. Overall the recipe averages a little over 200 cals per serving, but it's high on protein and is also a great way to get lots of veggies in!0 -
I usually have a SlinFast shake for breakfast.0

A lot of times I like having a smoothie for breakfast. Like this morning my smoothie consisted of: whey protein powder, strawberries, a couple blackberries, a light blackberry yogurt, water and ice. It keeps me full for hours from the protein and it tastes good. It's also easy to take with me when I am on my way to work.0

Gotta good one for you,
Oat Bran Pancake.
2 TBsp oat bran mixed with 2 TBsp greek nonfat yogurt, 1 egg white
spray pan with nonstick coconut oil (better for you) and pour into pan like a pancake.. check bottom with spatula for browness after about 3 min (depending on gas or electric cooktop). then flip.
If you are eating fruit, slice some strawberries put on top (I heat my sliced strawberries in a small pan adding a little water) to make a syrup. Enjoy !0 -
Steel cut oats with a little vanilla almond milk (unsweetened). I make 2 cups of oats in 6 cups water - refrigerate leftovers and portion out a cup every morning and microwave. My kids love it too.0
