    I didn't have crackers when I was making meatloaf once and substituted Stove Top Stuffing from the canister...it was delicious 'cause the stuffing has seasonings in it too! Now I never make it without a little stuffing!

    These sound soooo yummy.........I'd ike to try them tomorrow....without reading all 10 pages of posts...does anyone have any idea what the count is on one of these (cal/carb/fat/pro)....would be very helpful

    I made these last night. Just finished eating some leftovers for lunch. YUM.

    I used just 1 pound of 96% lean ground beef and put the same amount of onions & carrots but cut back on the crackers ( I used 15) and ketchup. I still got 12 good sized "muffins" out of it and each one had about 20 fewer calories because of that. My 30 year old BF apparently has the mentality of a 7 year old & thinks the term "meat muffin" is the most hilarious thing in the world. I can't count the number of times I've heard "meat muffin" in the last 24 hours. :tongue:

    Paired these with buttermilk mashed potatoes and green peas and had another huge fantastic dinner for under 500 calories. We ate around 7pm and I went to bed around midnight and I was never hungry at all.

    Thank you for this recipe! This one's a keeper.

  • Diner Meat Loaf 'Muffins'
    Ingredients
    1 teaspoon olive oil
    1 cup finely chopped onion
    1/2 cup finely chopped carrot
    1 teaspoon dried oregano
    2 garlic cloves, minced
    1 cup ketchup, divided
    1 1/2 pounds ground beef, extra lean (raw)
    1 cup finely crushed fat-free saltine crackers (about 20)
    2 tablespoons prepared mustard
    1 teaspoon Worcestershire sauce
    1/4 teaspoon freshly ground black pepper
    2 large eggs
    Cooking spray
    Preparation

    Preheat oven to 350°.

    Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, chopped carrot, dried oregano, and minced garlic; sauté 2 minutes. Cool.

    Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.

    Anyway... they turned out soooo good! ALL of my kids loved them, and that's saying something! It's hard to find something that all 3 of them like. In fact, they asked if I'd make them again tomorrow night! :laugh: I made homemade mashed potatoes w/ them and peas. They loved the little individual sized meatloaves instead of a slice too. It's all in the presentation, I guess! :ohwell:

    and also trying my italian style meat load recipe like this!
    just add pizza sauce in place of ketchup and omit mustard and worchestershire sauce! :)

    I just made them last night and they were a huge hit again!! Good thing I made enough for leftovers tonight. Good idea to use pizza sauce too!!

    Here is what I did last night and my cal counts.

    1 cup finely chopped onion
    1/2 cup finely chopped carrot <I used matchstick carrots, then diced>
    1 teaspoon dried oregano <and I also added Italian seasoning and basil>
    2 T. minced garlic
    15 oz reduced sodium tomato sauce, plus organic ketchup for topping
    2 pounds ground beef, extra lean (raw)
    1 cup old fashioned oatmeal
    2 tablespoons prepared mustard
    1 teaspoon Worcestershire sauce <and I also added 1 tsp. liquid smoke seasoning>
    1/4 teaspoon freshly ground black pepper <I also added some garlic & onion powder>

    Mix all together (I didn't sautee the onions or garlic in olive oil). Put in muffin cups. I baked at 400* for 30 minutes because my kids like them a little crunchier.

    Makes 18 muffins, 2 muffins per serving.

    Just made this for dinner with some roasted potatoes and steamed broccoli...So yummy! I think I'm going to use the muffin pan for all of my other meatloaf recipes, too.

    I think this is a nice "comfort" kind of recipe this time of year! :smile:

    I would think almost any meatloaf recipe could be made into these "muffins"...they are great for portion control AND they are cute and interesting for children!
