I make this with 2 cups of cotttage cheese, 10 ounces frozen spinach (throw and drain), a bit of garlic and two eggs. It make 4 good servings. I will usually have one serving for breakfast the next morning.

I made this this morning and it was awesome! I only put mushrooms in it. I totaled it up and got 400 calories. I could only eat 1/4 of it; it was very filling! I cut the rest into 3 pieces and froze it for breakfasts this week! Thanks for the recipe!0
