    Tonight is going to be grilled NY Strip Steak, fire grilled veggies (cauliflower, peppers, onion, brocolli, carrots, tomatos). As a side dish, I'll take sliced tomatoes and drizzle them with basalmic vinegar (25 year aged).

    While prepping and cooking, I'll enjoy a local beer from New Glarus called Spotted Cow.

    Kabobs on the grill-with lean organic beef, shrimp, mushrooms, cherry tomatoes, green peppers, and red onion. Yummy :-)

    Swapping the full on Sunday Roast (British meat, potato, pudding feast) for a more simple version of roast chicken with wholegrain rice, cauliflower, broccoli and peas. YUM.

    It's taco night - and while the rest of the family will have regular fully-loaded tacos, I'll have a modified version - taco bowl (without the shell), a little less meat, and lot more veggies, topped off with some avocado! I can't wait!
    If you don't want to eat the shell, I find that it's great to use a leaf of salad as replacement. Fill it with what ever you would use in normal tacos, et voila! :)

    I will not be eating well for dinner tonight. My husband has a craving for what we call "ghetto lasagna." It's cooked egg noodles, american singles cheese, and cooked bacon layered and baked and topped with tomato sauce. It sounds gross and it's a lot of calories, but it is very tastey, and even better reheated the next day.

    this is just plain awesome lol.


    i'm thinking grilled shish-kabobs. yummmmmmm :smile:

    Roasted minty lamb cutlets with roast potatoes, roast parsnips and carrots, cabbage, yorkshire puddings and gravy. Yum. Naughty but I've earnt it! X

    Homemade curry chicken and ambrosia. First time for making the ambrosia and I haven't had it in forever. I remember liking it, so we will see how that goes...

    You need to make ambrosia 12 hours to a day in advance or it won't be right... Best if it sits overnight. The marshmallows need time to disintegrate beneath the sour cream to give it a little sweetnees.

    Roasted eggplant parmesan. Althought it's supposed to be 90 degrees here today and I'm not sure I want to run the oven.

    Backup plan: Italian Beef sandwiches or BLT's.
  • I have been planning this meal for several days and maybe tonight I'll be able to pull it together....

    I have a fridge full of fresh vegetables. I'll be cutting up red, yellow and orange peppers in little dice. Carrots can go through the food processor so they are about the same size. Got some baby cukes in there too--gonna cut those up in little pieces too.

    I'll either drain a can of tuna and mix in some of this salad-y stuff, or I'll zap some salmon or tilapia or some other fish. Then, if I am feeling like I want more (and I've behaved myself during the day so I can "afford" it), I'll either wrap that up in a whole grain tortilla or I might take a corn tortilla, spread it with frijoles and maybe a little shredded cheddar.

    I might have to do this for lunch--just writing it out to share has made my mouth start to water!

    I was actually thinking homemade Chinese, too. Some beef stir fry meat and vegetable fried rice, nom.

    Grilled chicken salad as I was very naughty and had blueberry crumble and custard after lunch today!

    Thats not naughty - that is a bonafide trip down to Food Porn-ville! LOL!

    Looks like a good way to get some veggies in! Then I'll probably have a couple dove dark chocolate pieces to satisfy my sweet tooth :)
