    I loved reading your dinners, guys! These threads are the best.

    I tossed some chicken into buttermilk marinade this morning (1.5 cups lowfat buttermilk, 1 tbsp paprika, S&P to taste) and we are grilling it tonight. Going to steam some yellow squash and zucchini and have a large spring mix salad, too.

    Making a pot of quinoa, edamame, and white kidney beans that'll be the staple for this week's dinners. Probably will have a salad with tuna on the side or some steamed veggies, it shall vary.

    Too hot to cook here plus been doing yard work and cleaning the grill and furniture on the deck so I can start sitting out at night. So that said I will be getting something from subway. At least that will be fast and healthy.

    I made a spicy pinto bean and turnip green casserole. It was an experiment - we'll see how it turns out! Also having a spinach salad and piece of homemade challah on the side.

    Boneless, skinless chicken thighs cooked in the dutch oven with mesquite and lime 30 minute marinade, shredded and served on lettuce with shredded cheese, salsa, and sour cream. I wish I had an avocado and a couple of tomatoes. Might run to the store . . .

    We have some beautiful tomatoes...so tonight is bacon lettuce and tomato sandwiches....light on the bacon, heavy on the tomato. So looking forward to it!
