    3 - 4 egg whites,
    a splash of shredded/crumbled cheese (cheddar, or feta -lower fat/calorie option),
    two - 3 spinach leaves chopped
    2 - 3 baby bella mushrooms sliced
    1/8 - 1/4 chopped bell pepper (can mix any combination of red, yellow, green)
    a splash of lowfat/skim milk (for fluffy eggs) -- water will work for lactose allergies
    pepper to taste

    I use cheese inplace of salt, and i love things like mushrooms and bell peppers - because they are minimal calorie additions and packed with nutrients your body needs.

    I love omelets! Actually that is what I've had for dinner the last two nights :laugh:

    I tried a new filling and loved it - asparagus and parmesan cheese - super easy and yummy!!!

    While wisking the eggs, I add 1/2 tsp of dijon mustard. Where mustard is an emulsifier, this helps to not only add a hint of flavor, but binds the eggs together much better thus reducing the risk of breaking the egg while in the pan. EDIT: Less risk of the egg breaking while you either roll or flip the egg around your fillings

    Chinese Omelette

    Serves 2

    3 egg whites
    2 whole eggs
    1 tsp salt reduced chicken style stock powder
    cooking spray
    1/4 cup shallots (I usually use red onion or what ever I have at the time)
    1/2 cup mushrooms sliced
    1/4 cup frozen peas
    1 1/2 cups bean shoots

    There is a sauce that goes with this but I found it bland & unnecessary

    Directions:
    Using a whisk, beat egg whites, whole eggs and stock powder together in a bowl. In a medium size non stick frypan that has been generously coated with cooking spray, saute shallots, mushrooms, peas and bean shoots for 2 minutes. Spread vegetables out evenly in the pan, pour egg mix over the top. Cook until egg mixture has browned on bottom (it should be still runny on top), don't have the heat too hot or it will burn bottom of omelette. Place frypan under a heated griller until omelette is cooked on top. Cut in half & carefully lift omelette onto plates. :smile:

    It's 143 cals per serve

    1.6g sat fat
    4g fibre
    16.3g protein
    7.4g carbs
    2.9g sugar
    400mg sodium

    In my fav omelette I use 2 whole eggs, green and red bell peppers, red onion, cheddar cheese and Tapitio to taste. Yummy!

    hi guys
    i am sorry if someone already mentioned this i make my omelette in a bag with NO ADDED OIL. the big freezer bags that seal.

    in a pan i add water to boil
    i put bag over a glass so it keeps open
    i break the eggs in it
    add my veg peppers onions mushrooms etc
    season well
    and take air out and seal

    squash everything so the eggs and veg mix. put in the pan and boil till done. approx 20 mins...
    it just slides off the bag. serve with a big leafy salad....enjoy

    2 large eggs
    Grated mature cheddar
    Chopped bacon pieces
    1 Shallot fine sliced
    1/2 tsp onion salt
    1 garlic clove fine chopped
    1 tomato sliced
    mushrooms sliced

    fry off the bacon, garlic, onion, mushroom and tomato. Add onion salt. Whisk the eggs, add to the frying pan. Before the omelette is fully cooked , put cheese on and place under the grill. Putting it under the grill makes the cheese topping crispy.

    This is more of a evening-snack-because-I-have-protein-calories-left... not so much a complete breakfast. BUT SO GOOD

    Melt a little butter
    Put in some chopped fresh mint (yes, mint)
    leave that for a few seconds, long enough to grab your 3 eggs blended in a bowl
    pour it in and stir a bit
    proceed with standard omlette procedure
    before you fold it in half, add goat cheese

    My eternal graditude to Nigella Lawson for that one

    Most often its a bit of cheese, green onion, red pepper and maybe some ham with a bit of salsa or fresh tomatoes on top.

    2 slices of swiss cheese
    1/2 cup of cheddar cheese

    depends on what is in the fridge that needs ate up.

    Eggs, cheese, as much veg as I can put in it and some meat source if any available

    The last one I made was, egg, shredded chicken, hot pepper jack, onion, garlic, chopped tomato, and banana peppers with a pinch of hungiaran paprika. Yeah I like things spicy.

    I like a frittata; same concept though. I won't go into all of the cooking methods cause they are easily found online, but I use half egg whites and half eggs and I love to fill with fresh spinach, mushroom and tomato. Yum thanks for reminding me of this; haven't had in a while!

    1 whole egg, 3 whites, handful of spinach, fresh feta, turkey bacon, tomato = most frequent omelette. Sometimes just a of of reduced fat cheddar and a pc. of bacon. Usually slide it on to a Joseph's pita.
  • I make a Chinese omelette from a cookbook I have - it's egg, egg whites, sauteed mushroom, bean sprouts, shallots, peas with some chicken stock seasoning. Very tasty.
    I have to try that! Sounds really good!
  • I put Soyrizo (healthier chorizo substitute), pico de gallo, ff pepper jack cheese, kale, mushrooms, and top it with a spicy salsa verde!
