I eat mine ( 1 whole egg, 2-3 eggwhites) with fried green asparagus and grated Parmesan cheese.
That sounds lovely, saved to my recipe file, cheers0 -
I mix dukkah/Italian herbs (powdered from-a-jar kind) into the eggs and fill with tomato puree and cheese. Pizza omelette!0

I just made this little beauty:
1 egg, 2 egg whites, 2 dollops of cottage cheese, 2 dollops of chunky peanut butter, and a heaping spoonful of jam. And a dash of cinnamon.
It tasted exactly like a french toast peanut butter and jelly sandwich.0 -
This is more of a evening-snack-because-I-have-protein-calories-left... not so much a complete breakfast. BUT SO GOOD
Melt a little butter
Put in some chopped fresh mint (yes, mint)
leave that for a few seconds, long enough to grab your 3 eggs blended in a bowl
pour it in and stir a bit
proceed with standard omlette procedure
before you fold it in half, add goat cheese
My eternal graditude to Nigella Lawson for that one
Sounds yummy, I'll definitely be trying that. Thank you (and Nigella!)0 -
Not a traditional omelette, but here goes.
I buy fake eggs. P
Poor them into a greased muffin pan. Add your favorite omelette items. Cook for 20 minutes at 375.

I recently discovered a Subway gem for less than $4.00.
I order two egg white patties, turkey, and American Cheese. Then they toast it and I add my veggies. Once I get to work, I put on a plate and enjoy! It is around a $3.00 breakfast and is around 330 calories! Plus, I didn't have to cook it and it was super cheap! But remember...no bread. Save your bread indulgence for later.
Oh yeah...ask your local Subway if they take call in orders. Program their number in your phone and give them a call when you are on your way (hands free device of course...:-) Saves time when you are in a rush and don't have time to wait.0 -

I mostly either do chicken/chorizo/ red onion/cooked potatoes or very trimmed smoked bacon bacon, strong cheese, and chive. I always use whole eggs and I don't find them that calorific, using strong flavours helps as you don't need large quantities> Plus I have good quality cooking utensils (hope this doesn't come across like an advert and breach MFP rules!) but I use Circulon pans and don't need to add any fat.0

The above is a 1/2 portion of a:
4 egg omelette
grated cathedral city cheese
chopped cherry tomatoes
sliced chestnut mushrooms
seasoned with lemon and garlic herbs
and fresh basil
with a little side salad.
I also like to make
4 egg omelette
cherry tomatoes
courgettes
mushrooms
fresh chopped sage
fresh chopped garlic (clove)
Yummy!

hi guys
i am sorry if someone already mentioned this i make my omelette in a bag with NO ADDED OIL. the big freezer bags that seal.
in a pan i add water to boil
i put bag over a glass so it keeps open
i break the eggs in it
add my veg peppers onions mushrooms etc
season well
and take air out and seal
squash everything so the eggs and veg mix. put in the pan and boil till done. approx 20 mins...
it just slides off the bag. serve with a big leafy salad....enjoy
What a great idea, never heard of this before.... I am going to try this!!! Thanks so much.0 -
1 large egg
2 large egg whites
A smidge of water (helps make it fluffy w/o calories)
1 or 2 oz of colby or colby jack cheese
1 large mushroom
1 pepper (depending if I have any)
2 oz. of chicken lunch meat
I eat this most often. Loaded with protein. There are some great ideas on here though!!0 -
Egg whites (maybe a whole egg. I despise yolk. I'm trying to get myself to eat them occasionally)
Spinach
1 Mini babybel
1 slice of turkey bacon
I'll be the first to admit that I'm pretty boring when it comes to omelettes.0 -
4 slices of pepperoni and a little cheddar.0
-
thanks for all the yummy ideas! I'm the most boring person alive... 2 eggs; 1/8 cup colby jack cheese; microwave omelette maker!0

For me, there's nothing like the *healthier* version of the old school Portuguese omelette my mom makes:
2 egg whites
1 whole egg
splash of water
3 thin slices of chourico
1/4 cup diced onion (green or white, we're not picky)
salt
pepper
My favourite of all time.0 -
Having made omelets for a living for years, I'm a purist at heart. It's usually about 2 oz of meat, whatever is on hand, two eggs, whole (I actually run very low on cholesterol, and doctors have warned me to increase it), and a single slice of pepperjack cheese cut on the diagonal. Throw eggs in the pan, move them around until the bottom is solid, add meat, flip the omelet, add cheese, close the omelet onto the plate, add some salsa for taste.0
-
I like to put the ready cooked bacon from M & S, cheese (sometimes laughing cow, sometimes mozzarella), baby spinach leaves and cherry tomatoes. xx0
-
I love omelettes! gotta try all these recipies...except the PB&J...almost gagged on that one....
My favorite is onion, baby spinach, yellow pepper, ham and cheddar, with a spoonful of either salsa, or marinara sauce...yummers!0 -
I like lots of veggies. I sautee onions, red pepper, sliced zucchini, broccoli, tomatoes and fresh garlic. I use two eggs and about 1/3 cup of cheese. Mmmm. One of my favorite, and most easy dinners.0
