What's your favorite salad?

I eat the same salad every day for lunch. I'm not tired of it, but would love some new ideas. Below is the info on mine. Please share your favorite salad.

2 cups baby spinach
1 Tbsp. bleu cheese crumbles
1 package Emerald Breakfast On The Go mix (Breakfast Nut Blend)
2 Tbsp. Wishbone Superfruit Berry Vinaigrette

    3 cups baby spinach
    1 slice Delifresh Rotisserie Chicken (packaged)
    1/8 cup petite cut diced tomato in garlic & olive oil (juice drained)
    2 tbsp. Light French Yogurt Dressing

    Super awesome and cheap to make :)

    2 cups red/green leaf lettuce
    1/2 c beets
    1/2 c garbanzo beans
    1/3 c cottage cheese
    1/8 cup shredded cheese
    1/2 sliced egg
    1/2 small avocado

    1 tbsp light italian dressing.

    This is my favorite (fruit) salad.....

    1 tablespoon Peanut butter
    Juice of one orange
    ( this is the dressing)

    Dice one granny smith apple
    handful of seedless red grapes (sliced)
    handful of mung bean sprouts
    Tablespoon of raw sunflower seeds.

    (you can skip the bean sprouts & add banana instead)
    Toss it in a bowl & then eat it up.

    Quartered artichoke hearts (in brine)
    White kidney beans
    tiny cubes of sharp chedder cheese

    I eat very close to the same thing but add in a handful of halved strawberries!
  • Half baby spinach and half sping mix.

    Honey Mustard Dressing.

    Chicken and Bacon(or in my case, vegetarian chicken and bacon).

    strawberry poppyseed vinaigrette (made with truvia 23 cals for 2 TBSP)

    Nothing wrong with liking the same salad every day, you might just want to vary the ingredients every once in a while. For example, instead of feta cheese, try crumbled goat cheese, or add some fresh fruit, whatever is in season. Instead of crumbling a protein bar, occasionally try using some chopped nuts.

    2 c lettuce/spinach/whatever greens i have on hand
    1/2 c low sodium black beans
    1/4 c reduced fat mexican blend shredded cheese
    2 tbs cilantro lime jalapeño vinaigrette (http://kneadtocook.com/?p=903)

    i eat this nearly every day & love love love it.

    what a great topic...bump, bump, bump!!!!! Thanks for some wonderful salad recipes!!! I like iceberg lettuce (i know boring) and just add random veggies, etc...this is great. Time to experiment.
  • Spinach & Berry Salad:
    2 cups baby spinach
    2-3 strawberries sliced
    8-10 raspberries
    1/2 small avocado sliced

    Sauce: mix 1 tsp mayo with 1 tsp sour cream, add a tiny bit of fresh thymes leaves and mix. Drizzle only enough for taste over your salad. It's delish and and not that many calories (and if your exercising you can work that off quick enough)

    Raw Vegie Salad:

    1 Green Bell Pepper, chopped into medium sized squares
    1 Roma Tomato chopped into same squares
    1 Fresh carrot, sliced into semi-thick slices
    1 small avocado, chopped into medium size squares

    Mix your vegie squares. The juice from the tomato and the avocado make a natural 'dressing' and sprinkled with just a tiny bit of salt and pepper this salad is easy to make, very filling and low in calories but flavorful.

    I have 2 in particular that I love!

    The first one is Spinach, walnuts, avocado and Annie's Goddess Dressing(<----to die for)

    And a caprese salad I make- mozzarella balls sliced, grape tomatoes sliced, and fresh basil mixed in a bowl with olive oil and balsamic vinegarette. Crack some pepper and sea salt in there...yum!

    I'm not a very adventurous eater, but I do at least on salad a week, and these are the two I migrate back two the most. I don't do cheese on them, because I'm lactose intolerant. However, adding some fresh parmesan to either one would be delicious, I bet!

    I use grape tomatoes and red wine vinegar instead of what the recipe lists. the best part about this salas is the seasoned salt. You have to let it sit overnight or its not nearly as good. I also throw in some feta. Hubby and I love it so much we decided to get grape tomato plants this year!

    Just had it tonight at my favorite little restaurant ...... a Mediterranean salad with greens, feta, olives, tomatoes, roasted red peppers .... and grilled salmon ..... with balsamic dressing :smile:

    Otherwise, it's whatever is in my fridge .....

    - Combination of greens
    - Raw and/or cooked veggies
    - Leftover steak or chicken
    - Handful of black beans or chickpeas
    - Sprinkle of nuts and/or cheese
    - Apple slices
    - Rice wine vinegar

    So many! I'll put a few down. I rotate these through the week. I'm working on a BBQ seitan salad but have not found the combo I like for the sauce.

    what I'm eating right now:
    3 c. Mixed salad greens
    1 c. Spinach
    1/4 c. sesame ginger tofu
    1/4 c. quinoa
    1/4 c. carrots, beets and yellow squash mixed and grated
    about 10 cherub tomatoes
    1 baby bella mushroom sliced.
    balsamic vinegar

    Mixed berry salad
    3 c. mixed greens
    1 c. spinach
    1/4 c. sliced mixed fresh berries (blueberries, raspberries, blackberries)
    2 Tb. raw walnuts chopped
    1/4 c. balsamic baked tofu
    balsamic vinegar or red wine vinegar

    Mondo Veggie Salad
    3 c. mixed greens
    1 c. spinach
    1/4 c. mixed grated carrots, zuccini, yellow squash, beets
    2 baby bella mushrooms sliced
    1/8 c. mixed green peas and corn
    15 cherub tomatoes
    1/4 c. broccoli
    1/4 c. Italian baked tofu or tempeh
    2 tb. Italian Dressing

    Taco salad
    3 c. mixed greens
    1 c. spinach
    1/4 c. mixed grated carrots, peas and corn
    about 3 black olives sliced
    1/4 quinoa
    3 Tb salsa
    1/4 c black beans with some taco seasoning mixed in (cumin, chili, garlic, onion)
    optional: taco filling - tempeh steamed and then sauteed with taco seasoning
    about 1/4 of an avacado sliced
    Sanctuary dressing (from Isa Chandra's book Appetite for Reduction...a low fat/cal, dairy free version of ranch)

    dried fruit
    flavored vinager (take plain vinager spice with dried/fresh seasoning let sit in a bottle use throughout the week).

    that's what i had all Mon-Fri last week, and really liked it! could also substitute with rotiss chicken/turkey
