    3 chicken breasts
    1 can black beans
    1 cup of chunky salsa

    cook on low for 5 hours

    shred chicken and add one package fat free cream cheese 30 min before finished.

    very good and low fat/calories. Sometimes I eat it on a tortilla if I can afford the calories.

    these sound great!

    I use my crock pot for a lot of things but the old standby is just pot roast ...

    - roast
    - beef broth
    - full onion
    - chopped garlic
    - spices (black pepper, garlic powder, onion powder, salt)

    on top of the roast i put carrots and potatoes ...
    cook on low for 8 hrs

    falls apart!! sooo good :)

  • I love skinnytaste.com. They have some awesome low fat, low cal recipes. If you search the MFP database for "Gina's Skinny Taste" there are lots of recipes listed already. Below is my favorite recipe that I have tried so far.

    Crock Pot Chicken Taco Chili
    Servings: 10 • Size: 1 1/4 cups • Calories: 203.7 • Fat: 1.4 g • Carb: 33.3 g • Fiber: 10.0 g • Protein: 16.9 g

    1 onion, chopped
    1 16-oz can black beans
    1 16-oz can kidney beans
    1 8-oz can tomato sauce
    10 oz package frozen corn kernels
    2 14.5-oz cans diced tomatoes w/chilies
    1 packet taco seasoning
    1 tbsp cumin
    1 tbsp chili powder
    24 oz (3-4) boneless skinless chicken breasts
    chili peppers, chopped (optional)
    1/4 cup chopped fresh cilantro

    Directions:
    Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro.

    It's so easy to make and it is great over rice, with multi-grain chips, topped with low fat cheddar cheese or low fat sour cream. This makes a lot and it is even better the next day for lunch!

    I've been thinking about getting a slow cooker so this is really useful, thanks.
    However, a friend of mine says she can always tell if something's been cooked in her mother's slow cooker though - she says it gives it a certain "flavour" (her mother is fastidious so it won't be a cleanliness issue) anyone else had this experience?

    this is SERIOUSLY good, and can be tweaked to make it lower cal by using leaner beef and omitting most of the oil. Can be made lower carb by subbing the sugar for splenda and the flour for xanthan gum to thicken.

    I have made it about 6 times now!
  • Try this for the most delicious Gammon you've ever tasted!

    Get yourself a boneless Gammon Joint and put it in the slow cooker / crock pot.
    Then half / 2 thirds cover it with Coca Cola (full strength not diet).
    Switch on low before you leave for work in the morning.
    Come home at tea time for the most tender sweet gammon in the world!
    Delicious!!

    You can also switch the Coca Cola for Apple Juice or Pineapple Juice (probably any fruit juice really).

    With the leftover stock in the slow cooker / crock pot add your favourite chopped up root vegetables and pulses and leave to cook overnight or your next working day and there you have a few days worth of soup which you can enjoy or freeze to enjoy at a later date.

    If you have any coca cola left over, add this to a glass of red wine for a delicious "calimocho" the Spanish love it apparently!

    whole chicken splash of wine pepper some herbs all the vegetables you can fit turn it on low and dinner will be done when you get home. (I work too many hours so I have my crock pot on a timer)

    Last night I did a tri- tip roast: Season w/your favorite seasoning ( I used garlic, salt & pepper) a splash of worechestershire sauce, drizzle olive oil (or not) and 1/2 cup of water. 7-8 hours on low, or 4-5 on high. A whole chicken is awesome, fall off the bone and juicy and you can put almost anything in, in the morning frozen and cook all day. LOVE my crockpot.
