    Greek style lemon chicken rice soup

    12 cups no salt added chicken broth (campbell's)
    6 skinless Chicken drumsticks frozen (it was what I had available. Can use 3 whole chicken breasts too)
    1/2 cup lemon juice
    1 cup rice (uncooked) (any rice will do. I used jasmine rice)
    10 cloves garlic
    1/4 cup Corn flour or any other flour (for thickening)
    a handful of fresh dill for seasoning
    sprig of rosemary for seasoning
    salt
    pepper

    Add the broth, chicken, lemon juice, garlic, dill,salt and rosemary to the crockpot. Leave on high for 3 hours (after about an hour, remove and discard the rosemary to avoid over seasoning). After 3 hours, if you use drumsticks like I did, take the chicken out and separate bone from meat, shred the meat with a fork and throw it back into the crockpot. Add the rice. Leave it on high for 35 minutes and switch it off. Even if the rice is slightly undercooked, its alright. It will cook because the crockpot contents are still very hot. Make a smooth and slightly watery paste with the corn flour and add to the crockpot while constantly stirring. Sprinkle some pepper and adjust salt if needed.

    Makes about 13 servings of 1 cup each

    Greek Chicken
    Makes 6 servings
    278 calories

    4 potatoes, unpeeled, quartered
    2lbs. chicken pieces, trimmed of skin and fat
    2 large onoins, quartered (I used 1)
    1 whold bulb garlic, minced
    3tsp. dried oregano
    3/4tsp. salt (I did not add salt)
    1/2tsp. pepper
    1TLB. olive oil

    1. Place potatoes in bottom of slow cooker. Add chicken, onions, and garlic. Sprinkle with seasonings. Top with oil.

    2. Cover. Cook on high 5-6 hours or on Low 9-10 hours

    Made this over the weekend, very good, I altered a few thing fat free cream cheese, and added fresh herbs, garlic and jalepenos.
    very good, put in tortilla shells with avacado, yum. Froze the rest in cup servings to use on rice or salads.

    hello all im new just got going.

    i have a crock pot but have no idea how to use it. my mom was going to teach me but she passed away last year. i have just started to come out of my funk so if anyone could give me some pointers on how to use the darn thing that would be great

    Crock pots are easy hun. Put a ton of things in there that taste good, and flip the switch on!!

    I made slow cooker lasagna yesterday. It was yummy. Nothing special about the recipe. Just do your lasagna layers just like when you bake it in the oven. Cook on low for about 4 hours.

    Shredded Chicken Chipotle for tacos or anything:

    Chicken crockpot tacos:

    3 - 4 chicken breasts (this makes tons)
    One to two packs of chipotle ortego taco seasonings
    Mushrooms
    Onions
    Black olives
    Half can of rotel
    1 ½ cups water

    Slice all your onions/mushrooms and put in bottom of crockpot. Add black olive to taste. Put ck on top. Stir together water and taco seasonings. Pour over ck and veggies. Add rotel on top. Cover and cook 7-8 or so hours on low. (works on high 4-6 as well). About an hour before they are done uncover them and shred the chicken with forks and stir together. They will absorb the liquid.

    These come out so so tender and juicy and delicious

    kidney beans or black-eye - your choice
    jar of salsa
    fajita or taco seasoning

    Put it all in the slow cooker leave on high 4hrs or low 7-8hrs. Then put in light philadelphia leave to melt for about 10-15mins then mix around and shred chicken a bit. Great in wraps, lettuce wraps, over rice, with salad - up to you!

    This looks yummy, marking it to make later in the week :)
