    I've made these a couple of times now. Both times I left out the onion. The first time I used bread crumbs. The second time I used whole wheat flour instead of bread crumbs and added grated carrots as well. They were wonderful hot and cold and reheated. I used whole wheat flour to cut down on the sodium for me. Tasted like a quiche. This is an easy recipe to make and fun to experiment with.

    i can't wait to try this my garden yet again is overflowing with lrg zucchini's many of then..... another good thing to do is slice the zucchini and marinate in zesty italian dressing and grill them YUM!!!!

    Can anyone convert the US cup measures for UK ones? Either oz or grammes. They look absolutely delicious and I am going to try them anyway and do a bit of guessing - trial and error. I am not sure we can get panko breadcrumbs easily here but will use dried breadcrumbs instead.

    i hope i am doing the conversions correctly as "cups" measure volume, so i am converting to mL for you:

    240 mL (1 cup) courgette, includes skin, raw, finely chopped
    60 mL (1/4 cup) onion, raw, finely chopped
    22 g (1/4 cup) parmesean cheese, grated
    40 g (1/4 cup) panko bread crumbs
    1 egg, whole, raw (or 2 egg whites)

    Put onion and zucchini in food processor so its finely chopped. Mix everything together. Spoon into mini muffin tins (greased) & pat down with back of spoon. Bake in 200* C oven (or gas mark 6) for 20 minutes or until you notice them getting golden brown crust on the edges. Recipe yields 12 mini-tots per batch.

    they should be in your store, right next to the other bread crumbs :) Hope you find them! :)

    If you don't find them with the regular bread crumbs - look in the oriental section, that is where I usually find them.
