    I bought the fix it and forget it diabetic cookbook. Tons of awesome food in there!

    Greek Chicken
    Makes 6 servings
    278 calories

    4 potatoes, unpeeled, quartered
    2lbs. chicken pieces, trimmed of skin and fat
    2 large onoins, quartered (I used 1)
    1 whold bulb garlic, minced
    3tsp. dried oregano
    3/4tsp. salt (I did not add salt)
    1/2tsp. pepper
    1TLB. olive oil

    1. Place potatoes in bottom of slow cooker. Add chicken, onions, and garlic. Sprinkle with seasonings. Top with oil.

    2. Cover. Cook on high 5-6 hours or on Low 9-10 hours

    This looks delish. Does any one know if you have to add any sort of liquid for this recipe such as water or chicken broth? Thanks.

    In my crock pot today is 2.5 lbs chicken tenders, one can of pineapple chunks in juice, and about 1/4 cup of bbq sauce.
    Will have this for dinner tonight- either in wraps or over rice, depending on which one I want :)

    Yum, I will give this one a try...maybe add some peppers and carrots?

    Best Roast Ever

    Chuck Roast (trimmed)
    8 oz jar Pace Picante Sauce
    1 envelope Knorr French Onion Soup
    1 C red wine (use pace jar to measure)
    tsp of Morton's Nature Seasoning.

    Put every thing in about 7:00 p.m. on Hi and then around bedtime, click to Lo .... If you work, you can put on in a.m. and it will be done when you get home.

    My slow cooker does give a flavor I cant seem to get rid of too but the older ones did not. This is a new one that has a seal and lock to take it places. I think it is the rubber seal around the top edge that is doing it or the knob on top that is not the good old glass. I was wondering how to get rid of this myself just a few days ago.

    Crock Pot Beer Chicken -

    4-6 Chicken Breasts or 1 Whole or cut up Chicken
    1 Can of any kind of Beer
    3 Potatoes - quartered
    1 Carrot - chopped
    1/2 tsp Garlic Powder
    1/2 tsp Basil
    1/2 tsp Paprika
    1/2 tsp Black Pepper
    1/2 tsp Kosher Salt

    *You can use whatever spices you like
    Put all ingredients into crockpot
    If frozen cook on high 4-5 hours or low 8-10
    If fresh cook on high 3-4 hrs or low 7-8 hours if fresh

    try 2-3lb whole pork loin or whole beef roast
    1 packet brown gravy mix
    1 packet ranch dressing
    1 packet italian dressing
    1 cup water
    cook on low 6hrs or so

    8 or 10 skinned chicken thighs with the bones still in, enough chicken stock to cover, a couple of finely chopped onions, 2 or 3 cups of porcini mushrooms, and a cup of pearled spelt. Toss in some finely chopped parsley at the end. Yum yum :)

    This sounds really good.....I'm planning on doing a roast this weekend and will try this recipe. Do you know how many calories per serving it is?

    I did a whole chicken last week, about 4 pounds.

    All I did was defrost it, shove a quartered half onion and some fresh rosemary from my garden inside it.

    Then, I added a tiny bit of chicken stock to the pot.

    I also like to take pharmacy (non needle) syringes and inject chicken stock into the bird while it is cooking at least 2 times. Sometimes it's good to do more.

    It came out fantastic, the meat was falling off the bone.

    FWIW, you can also do this with your turkey at thanksgiving. It will be the juiciest turkey you have ever made. There's something about adding some chicken stock back INTO the bird to just make it melt in your mouth.

    1 pound dried pinto's
    1 can Rotel tomatoes with chilis
    1/2 lb turkey bacon
    1/2 white onion, chopped
    garlic, salt, pepper, chili powder, cumin - to taste (or smell)

    Mix all into slow cooker. Cover with water plus about 2 additional inches. Cook on high for about 5 hours, or on low for about 7 hours. You can freeze the beans in ziplocks so you have single portions available.

    Frozen chicken breasts, a can of diced tomatoes and chiles or a jar of salsa plus some taco seasoning. When the chicken is falling apart (you can cook on low all day) then shred it and add drained beans, veggies, corn, green beans, plus more salsa and cook for an hour or two. It's low-cal as a soup or over brown rice or quinoa. It's an old Weight Watchers low-carb recipe -- filling and low-calorie. You can do it on the stove top for an hour or two in a hurry.

    I depends on the size roast. Just run it through the recipe nutrition thingy after you get your roast.
