    I chased this recipe through page 15, to get all the variations that had been tried.15 calories is too good to pass up.
    someone mentioned using oatmeal instead of Panko bread crumbs. Has anyone tried mixing a little Quinoa in with the flour?

    I have these in the oven right now! My "mini" muffin tins are not quite a small as some of the ones that I see in the store--hopefully they will cook through without getting too brown. I did take the step of squeezing out the grated zucchine and onion. I think they would have been way too wet without this step. I'll let you all know how they turn out!

    Really, really good! Just needed to cook them a little longer in the slightly larger muffin cups.
